RAINBOW TROUT WITH HONEY MUSTARD
I wanted to create a recipe that could cover up the taste of the fish, while keeping it healthy. This tasted awesome! I look forward to getting your feedback.

Steps:
- Set the broiler on hi.
- Combine the wine, butter, garlic, mustard, oregano in a bowl and combine.
- Place the four fillets in a glass bowl.
- Add fresh cracked pepper on fish.
- Pour wine mixture over the fish.
- Broil the fish for 5-7 minutes.
- Add the cheese and lemon juice.
- Broil until cheese begins to brown.

HONEY STEELHEAD TROUT
Steps:
- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
- Place trout, skin-side down, onto the prepared baking sheet. Cover trout with honey and sprinkle mesquite seasoning, black pepper, and seasoned salt over honey. Press honey and seasonings into trout using a fork.
- Bake in the preheated oven until fish flakes easily with a fork, 15 to 20 minutes.

HONEY BROWNED TROUT ( CANDY TROUT )
Title caught your interest? My family loves trout so I wanted make something different than fried or Almondine or baked lemon and butter. Sweet, bu the garlic comes through nicely. Hope you enjoy. I used 1 pound fillets of local Steelhead ( Hatchery ).

Steps:
- Heat oven to 350°F.
- In a food processor or blender combine honey, garlic, salt, pepper and olive oil. Puree/process until well mixed. (Will look like slightly melted whipped butter).
- Spray a shallow baking dish with non-stick cooking spray, or lightly butter (your choice). Place fillets in dish.
- Brush on the honey sauce, trying to use it all.
- Sprinkle with brown sugar, covering the fillets.
- Bake (my fillets took 30 minutes to be done) until fillets are golden brown and the sugar has caramelized.
- Serve warm.

- In a small bowl, combine the first eight ingredients. Pour half of the marinade into a large resealable bag; add pork chops. Seal bag and turn to coat; refrigerate for 6-8 hours or overnight. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill pork, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°, basting frequently with reserved marinade. Let meat stand for 5 minutes before serving.

- Cook bacon until partially cooked but not crisp; drain. Place each trout on a double thickness of heavy-duty foil (about 20x18 in.). Place lemon and onion in the trout cavities; sprinkle with salt and pepper. Wrap trout with bacon. Fold foil around trout and seal tightly., Place carrots on a double thickness of heavy-duty foil (about 20x18 in.); sprinkle with salt and pepper. Dot with butter. Fold foil around carrots and seal tightly., Grill carrots, covered, over medium heat for 10 minutes. Add trout packets to grill; cook 20-25 minutes longer or until fish flakes easily with a fork and carrots are tender. Serve with lemon wedges.
