Marinating in an orange-rosemary mixture before going under the broiler makes these bone-in pork chops sweet-and-savory.

2 oranges (1 zested and juiced, 1 cut into 8 wedges)
1/4 cup white-wine vinegar
3/4 cup honey, preferably orange blossom
Salt and pepper
4 bone-in pork chops (about 8 ounces each, 1 inch thick)
5 sprigs rosemary

Steps:

  • In a bowl, whisk together orange zest and juice, vinegar, honey, and 1/4 teaspoon pepper. Place pork, orange wedges, and rosemary in a shallow dish or zip-top bag and coat with marinade. Refrigerate pork at least 2 hours or up to overnight.
  • Remove pork, orange wedges, and rosemary from marinade; transfer pork and oranges to a wire rack set on a foil-lined rimmed baking sheet. Season pork with salt and pepper. Transfer marinade to a small saucepan, simmer over medium until reduced by half, about 5 minutes.
  • Heat broiler, with rack in upper third of oven. Broil pork and oranges 3 minutes, then flip pork, brush with reduced marinade, and add rosemary. Broil until pork is lightly charred and cooked through, 5 to 7 minutes. Brush with more reduced marinade and serve.

4 boneless pork loin chops, 3/4 inch thick (1 lb)
3 tablespoons Worcestershire sauce
1/3 cup honey
1 tablespoon grated orange peel
1/4 teaspoon salt

Steps:

  • In shallow glass baking dish, place pork chops. Brush 1 tablespoon Worcestershire sauce over both sides of each. Let stand at room temperature 15 minutes to marinate.
  • Meanwhile, heat gas or charcoal grill. In 2-quart saucepan, mix remaining 2 tablespoons Worcestershire sauce, the honey, orange peel and salt until well blended. Heat to boiling over high heat. Reduce heat to medium; boil 1 minute.
  • When grill is heated, place pork on gas grill over medium-high heat or on charcoal grill over medium-high coals. Spoon half of honey mixture evenly over pork. Cook uncovered 5 minutes. Turn pork; spoon remaining honey mixture over pork. Cook uncovered 3 to 5 minutes longer or until pork is slightly pink in center and thermometer inserted in center of pork reads 160°F.

5 (1-inch thick) boneless pork chops
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 tablespoon olive oil
1 cup honey
¼ cup brown sugar
¼ cup soy sauce
2 teaspoons chopped garlic
2 tablespoons butter
¼ teaspoon ground ginger
1 dash cayenne pepper, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Season pork chops with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium heat. Brown pork chops 3 to 4 minutes per side. Transfer to the prepared baking dish.
  • Whisk honey, brown sugar, soy sauce, garlic, and butter together in a bowl and pour over the pork chops in the baking dish.
  • Bake in the preheated oven for 25 minutes. Remove from oven and let pork chops sit in the baking dish 5 minutes more to soak up juices.
  • Serve pork chops topped with extra sauce.

1/2 teaspoon paprika
1/4 teaspoon pepper
salt
1 medium orange
1 cup orange juice
1/2 cup sugar
1 tablespoon cornstarch
1/2 teaspoon cinnamon
12 whole cloves
1/4 teaspoon salt

Steps:

  • In greased skillet, over high heat, cook pork chops until well browned on both sides.
  • Add next 3 ingredients and 1 tsp salt; heat to boiling.
  • Reduce heat to low; cover; simmer about 35 minutes, turning once.
  • Meanwhile, prepare orange sauce: grate 1 T.
  • peel from stem end of orange; then from other end, cut 4 thin slices; set aside.
  • In saucepan over medium-high heat, cook orange peel, orange juice, sugar, cornstarch, cinnamon, cloves and salt until thickened, stirring.
  • Add orange slices; cover; remove from heat and keep warm.
  • To serve, top pork chops with orange sauce.
  • Use orange slices as a garnish.

1 serving nonstick cooking spray
4 bone-in pork loin chops
1 pinch salt and ground black pepper to taste
2 tablespoons packed brown sugar
2 tablespoons honey

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray. Season pork chops with salt and pepper.
  • Coat a skillet with cooking spray and heat over medium heat. Add chops to the hot skillet and cook until browned, about 5 minutes per side.
  • While the chops are browning, combine brown sugar and honey in a microwave-safe bowl. Microwave on high until brown sugar has softened or melted, about 20 seconds. Stir to combine.
  • Transfer browned chops to the prepared baking dish and spoon 1/2 of the honey glaze evenly over top.
  • Bake, uncovered, in the preheated oven for 15 minutes. Remove from the oven, turn over, and spread the remaining honey glaze over top. Bake until no longer pink in the center, 15 to 20 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

2 medium oranges
2 tablespoons honey
1 tablespoon dijon style mustard
2 tablespoons orange marmalade
2 tablespoons vinegar
3/4 cup chicken broth
1/2 cup acini de pepe
4 thinly sliced green onions
1/4 teaspoon ground ginger
1/2 cup finely chopped celery
6 cut 1 1/4 inch thick pork chops
1/3 cup snipped dried apricot
1 cup chicken broth
apricot preserves

Steps:

  • Peel and section the oranges over a bowl reserving any juices coarsely chop the orange sections. In a small saucepan blend honey and Dijon-style mustard. Stir in orange marmalade and vinegar. Heat and stir mixture till the marmalade melts. Remove from heat set saucepan aside.For stuffing: In a saucepan bring chicken broth to boiling add acini de pepe, sliced green onion, and ground ginger. Reduce heat simmer, uncovered, 5 minutes or till acini de pepe is tender. Remove from heat. Fold in orange sections, 2 tablespoons reserved juice, 2 tablespoons of the honey mixture, and celery.Cut a pocket in each pork chop by cutting from the fat side almost to the bone. Spoon 2 to 3 tablespoons stuffing into each chop. Fasten pockets with a wooden pick. Spoon remaining stuffing onto a large sheet of double thickness foil and fold up into a pouch. Set pouch aside.*In a covered grill arrange preheated coals around a drip pan. Test for medium heat above the pan. Place stuffed pork chops on the grill rack over the drip pan but not over the coals. Lower the grill hood and grill the chops for 15 minutes. Turn chops and brush with some of the honey mixture.Place the foil packet of stuffing on grill next to chops. Cover and grill 15 to 20 minutes more or till the chops are done. Brush both sides of chops with remaining honey mixture before serving. Serve chops with extra stuffing.Honey-Apricot Pork Chops:Prepare Honey-Orange Pork Chops as directed above except prepare the stuffing using 1/3 c. snipped dried apricots instead of the fresh oranges. Increase the chicken broth to 1 c.. For glaze, use apricot preserves in place of the orange marmalade. Stuff and grill pork chops as directed.
