SPICED HONEY ROASTED NUTS

Steps:
- Preheat the oven to 160°C/325°F/gas mark 3 and line a roasting tray with baking parchment.
- Place the honey and butter in a pan and heat gently until the butter has melted. Stir in the cinnamon, cayenne pepper, nutmeg and ginger then add the nuts and stir until they are well coated.
- Spread the nuts out on the prepared roasting tray and roast for about 20 minutes, giving them a good stir every five. The nuts should be browned but not burnt.
- Leave to cool for 2 minutes while you mix together the salt and demarera sugar in a large bowl. Add the nuts (they should still be hot at this point) and stir until they are well coated. Taste and add more salt and/or sugar as needed.
- Return the nuts to the roasting tray, spread out in a single layer and leave to cool completely before decanting into jars.

Steps:
- Preheat oven to 325°F.
- Line a baking sheet with parchment paper.
- Combine all ingredients in a medium-sized bowl, making sure the nuts are well-coated.
- Spread nuts in a single layer onto baking sheet and drizzle any extra coating over the top.
- Transfer to oven.
- Bake for 5 minutes.
- Stir every 5 minutes for a total of 20 to 25 minutes.
- Remove from oven and cool completely.
- Break up clumps before serving.
- Can be stored in an airtight container for 2 to 3 weeks.

- Preheat oven to 325 degrees F. Combine nuts and seeds in a medium-sized bowl. Add the maple syrup and spices and salt and toss to combine. Spray a baking sheet with cooking spray, then transfer coated nuts to baking sheet and spread evenly in 1 layer. Bake 15 to 20 minutes, stirring once, until nuts are fragrant and lightly toasted.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
- Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
- Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
- Transfer nuts to the prepared baking sheet and spread into a single layer.
- Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

- Preheat oven to 325 degrees.
- Mix honey, butter, and half of cinnamon in saucepan and heat to boiling. Cook for 2 minutes, stirring constantly.
- In medium mixing bowl, pour honey mixture over nuts, stir well.
- Pour mixture onto non-stick cookie sheet and spread evenly.
- Bake for 10-15 minutes until nuts are lightly browned. Allow to cool.
- Mix sugar and remaining cinnamon, and toss with nuts.
