TOMATO BASIL SAUCE
This basic tomato basil sauce recipe is made using fresh or canned tomatoes, fresh basil, onions, garlic, and olive oil. This traditional red sauce can be served with pasta dishes, or used as a base for pizza, meat or seafood sauces, or dishes like lasagna.

Steps:
- Heat the olive oil or butter in a medium sized sauce pan.
- Add the diced onion and crushed garlic, cook until the onion is soft and translucent, about 5-7 minutes.
- Add the tomatoes and bring to the sauce to a boil.
- Reduce the heat and add the basil - some can be chopped, but you can also add the stalks (they add flavor) and remove the stalks when the sauce is done. Add the sugar if using, you can also add the salt and pepper.
- Cook the sauce over low heat for at least 30 minutes. Stir the sauce frequently with a wooden spoon and use the spoon to press and help breakdown the chunky tomato pieces.
- For a smoother sauce you can use a hand held blender to break down the tomatoes if using whole or diced tomatoes. If you let the sauce cook for longer the tomatoes will naturally break down, or if you prefer a more chunky consistency you can skip the blender step.
- Once the consistency suits your preference, the sauce is done and ready to use. For an extra taste of freshness you can add some freshly chopped basil when serving the sauce.
TOMATO AND BASIL PASTA SAUCE
A delicious and fresh tasting pasta sauce. The fresh basil added at the end is essential. This sauce can be left chunky (which I prefer) or blended in a food processor to a smooth sauce. Serve spooned over cooked pasta with plenty of parmesan cheese.

TOMATO-BASIL SAUCE
This is the second recipe from 30 Minute Meals Episode: Dinner and a Song. Okay, the first two reviewers have said this is a bit thin. So I'd suggest draining the crushed tomatoes also. But retain the juice incase it is needed later during cooking. Or you could add 1 or 2 tablespoons of tomato paste.

- Put large pot of water on to boil for penne.
- Salt boiling water and cook penne to al dente.
- Heat a medium pot on stove top over medium low to medium heat.
- Add extra-virgin olive oil, garlic and onion for the tomato basil sauce.
- Let onions cook with garlic slowly over 15 minutes, be careful not to brown onions.
- After 15 minutes, stir in tomatoes and raise heat to warm tomatoes.
- Season with salt and pepper.
- Stir in basil and wilt it into the sauce.
- Remove sauce from heat.
- When ready to serve, place sauce in the bottom of a large serving bowl to toss with hot pasta.

- Cut an X in the bottom of each tomato and blanch in a large pot of boiling water for 10 seconds. Immediately transfer tomatoes with a slotted spoon to an ice bath to cool, then peel, seed and chop. Cook garlic in oil in a small, heavy pot over medium heat, stirring occasionally until golden, 3 to 5 minutes. Add tomatoes, red pepper flakes, season with salt and pepper and add fresh basil. - In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
- Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
- If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.
EASY TOMATO BASIL SAUCE FOR SOUP OR PASTA
Full flavored, versatile and delicious. I serve the sauce on whole wheat spiral noodles with feta cheese and when I make the soup, I place a slice of toasted baguette smothered in cheese on top. It's an amazing meal solution.

- Dice all veg, press garlic and saute in stock pot with olive oil until slightly softened. Add diced tomatoes and tomato sauce along with sugar, salt, pepper, hot pepper flakes, parsley, and celery salt. (if you're using dried basil add it along with the other herbs) If you're using fresh basil, reserve 8 basil leaves to add at the end of cooking. Cook for 1 hour on medium heat. Keep an eye on the sauce and stir frequently. After the hour simmering add tomato paste and adjust salt and pepper to your taste. Cook for an additional 30 minutes on low.
- I choose to blend my sauce. I use an immersion blender directly in the pot and puree the sauce lightly. I then add the remaining basil leaves to the pot. When I serve this sauce on pasta, I drizzle Extra Virgin Olive Oil over the top. If you add the cream, add it right before you serve.
- This sauce lends well to Tomato Basil Soup. Add 2 Cups of the prepared sauce to 4 Cups Veggie or Chicken Stock, simmering until it's steaming hot.

RUSTIC TOMATO-BASIL SAUCE
This is one of my favorite recipes that I threw together one Friday during lent when we had no fish in the house and I had to come up with some dinner. It's simple, easy and very flavorful. When I cook, I like flavor...for instance, if I'm adding garlic then I need to be able to taste it! You might want to slightly decrease some of the spices based on your personal preferences. This sauce ends up being quite sweet, so adjust accordingly.

- Heat 2 tablespoons of EVOO in a sauce pan over low heat. Add garlic and stir continuously until soft. Do not let garlic start to brown; this releases a lot of bitterness and you'll be better off starting over.
- Add crushed tomatoes to sauce pan and turn heat up slightly to medium-low, stirring frequently. Add sugar to the tomatoes. At the same time, add 2 remaining tablespoons of EVOO to a pan and sautee onion and green pepper over medium-low heat until softened, stirring frequently for about 7-10 minutes.
- Add onion and green pepper with EVOO from the pan to the tomatoes and garlic and mix well.
- Add remaining ingredients (oregano, basil, salt, pepper, bay leaves, fennel seeds) and let simmer for about 45 minutes, stirring occasionally so as not to let ingredients settle or burn at the bottom and to promote flavor.
- Serve over your favorite pasta, garnish with fresh parsley and grated cheese of your choice (if desired), as well as some crusty Italian bread.
- ***Hint: If you lightly toss your pasta in olive oil after draining it, it will hold more sauce more easily while you're eating it.

- Freshly ground black pepper Place 1 cup crushed tomatoes in blender. Add pine nuts and blend until very smooth, about 1 minute.

- Wash tomatoes.
- Dip each tomato in boiling water 30 to 60 seconds or until skins split.
- Plunge immediately into ice water; core, peel, and quarter tomatoes.
- Place 4 cups of tomatoes in a large stockpot; crush tomatoes.
- Quickly bring to a boil over high heat, stirring vigorously; gradually add remaining quartered tomatoes, stirring constantly.
- Reduce heat, and simmer, uncovered, 2 hours.
- Remove from heat; stir in basil.

- salt to each pint jar.
- Immediately pack hot tomatoes into hot jars, filling to 1/2 inch from top.

- Cover at once with metal lids, and screw on bands.
- Process in boiling-water bath 35 minutes.
- Yield: 6 pints.
