1 tablespoon reduced-sodium soy sauce
2 garlic cloves, minced
1 teaspoon sesame seeds, toasted
1 teaspoon brown sugar
1 teaspoon peanut butter
3/4 pound fresh green beans, trimmed
4-1/2 teaspoons vegetable oil

Steps:

  • In a small bowl, combine the soy sauce, garlic, sesame seeds, brown sugar and peanut butter; set aside. , In a large skillet, stir-fry green beans in oil until crisp-tender. Remove from the heat. Add the soy sauce mixture; stir to coat.

1 pound fresh green beans, cut into 1-inch pieces
1 tablespoon canola oil
1 cup julienned sweet red pepper
1 cup sliced fresh mushrooms
1/4 cup thinly sliced green onions
2 garlic cloves, minced
3 tablespoons reduced-sodium soy sauce
2 teaspoons minced fresh gingerroot
1/4 cup sliced dried apricots
1 teaspoon sesame oil
2 teaspoons sesame seeds, toasted

Steps:

  • In a large nonstick skillet or wok, stir-fry beans over medium-high heat in oil for 2 minutes. Add sweet pepper and mushrooms; stir-fry 2 minutes longer. Add green onions and garlic; stir-fry for 1-2 minutes., Combine the soy sauce and ginger; stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in apricots; cook and stir for 1 minute longer. Remove from the heat; stir in sesame oil and sesame seeds. Serve immediately.,

2 tablespoons honey
2 tablespoons unseasoned rice vinegar
1 tablespoon sesame oil
1 teaspoon red pepper flakes
Salt and freshly ground black pepper
2 tablespoons vegetable oil
1 pound green beans, washed and trimmed, cut into 1-inch pieces
2 cloves garlic, minced
1-inch piece ginger, minced

Steps:

  • Whisk together honey, rice vinegar, sesame oil, red pepper flakes, salt and pepper, to taste, in a small bowl; set aside. Heat the oil in a wok or large skillet on high heat. Add the green beans and cook, stirring 2 to 3 minutes until dark green and caramelized. Add the garlic and ginger, stirring constantly for 2 minutes longer. Add the sauce, stir to incorporate and heat another minute. Transfer to a serving dish and serve.

This easy Green Bean Stir Fry is sure to be your new favorite weeknight meal, with snow peas, tofu and a honey-sesame glaze- yum!

1/2 cup vegetable broth
3 tablespoons honey
2 tablespoons rice vinegar
1/4 cup low sodium soy sauce
2 cloves garlic (minced)
2 teaspoons toasted sesame oil
Pinch of red pepper flakes (optional)
2 tablespoons cornstarch or arrowroot starch
16 ounces firm tofu
2 tablespoons high heat vegetable oil (such as avocado or coconut (divided))
Salt and black pepper (to taste)
2 cups 4Earth Farms green beans (cut in half)
1/2 red onion (sliced)
2 cups 4Earth Farms snow peas
1 tablespoon sesame seeds
1/4 cup chopped scallions

Steps:

  • Combine the chicken broth, honey, sugar, rice vinegar, soy sauce, sesame oil and red pepper flakes (optional) in a small dish and whisk to combine. Set aside.
  • Pat the tofu dry and cut into cubes. Heat one tablespoon of vegetable oil in a large nonstick skillet or wok over medium heat. Add tofu and cook until browned on all sides. Drain on paper towels and sprinkle lightly with salt.
  • Add remaining tablespoon of oil to the skillet and increase the heat to high. Add the green beans and onion; cook until the green beans are blistered, about 5-7 minutes.
  • Add snow peas and cook for another 2-3 minutes or until crisp tender.
  • Add the tofu back to the skillet and reduce the heat to medium-low; give the sauce a quick whisk to reincorporate any ingredients that have settled to the bottom, then carefully add to the skillet. Add the sesame seeds. Stir to combine and cook until the sauce has thickened, about 2-3 minutes.
  • Serve topped with scallions.
