1-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 cups plain yogurt
1/4 cup butter, melted
2 large eggs, room temperature
2 tablespoons honey
Raspberry, peach or strawberry yogurt
Raspberries, blueberries and/or sliced peaches

Steps:

  • In a bowl, combine the flour, baking powder, baking soda and salt. Beat in plain yogurt, butter, eggs and honey until smooth. Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Top with flavored yogurt and fruit.

1 ¼ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon kosher salt
½ cup shortening

Steps:

  • Preheat a waffle iron according to manufacturer's instructions. Beat eggs in a large mixing bowl, then add yogurt, flour, baking powder, baking soda, kosher salt, and shortening, mixing until smooth.
  • Pour batter onto hot waffle iron. Cook until no longer steaming, about 5 minutes.

3 tablespoons unsalted butter
1 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup old fashioned oats
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 1/4 cups skim milk
3/4 cup plain Greek yogurt
1/3 cup honey
2 large eggs
1 teaspoon vanilla extract
maple syrup or honey

Steps:

  • Melt the butter in the microwave and set aside.
  • In a large bowl, whisk together flours, oats, baking powder, baking soda and cinnamon.
  • In another bowl, whisk together the milk, yogurt, honey, eggs and vanilla until smooth.
  • Pour the liquid ingredients over the dry ingredients and whisk until just combined.
  • Gently fold in the melted butter.
  • Preheat and lightly grease the waffle iron.
  • When the waffle iron is hot, pour batter into the wells of the waffle iron. (Fill according to the manufacturer's instructions).
  • Close the lid and bake until the waffle is golden and set. Carefully remove waffle from iron.
  • Serve warm with maple syrup or a drizzle of honey.

1 1/4 cups skim milk
3/4 cup plain fat-free yogurt
2 eggs (or egg substitute equivalent to 2 eggs)
1/2 teaspoon vanilla

Steps:

  • Combine the flour, baking powder, confectioners' sugar, oil, milk and egg yolks.
  • Beat the egg whites until they stand in soft peaks and fold into the batter (do not overmix).
  • Using a 4-ounce ladle, pour 1/8 of the mixture into a hot waffle iron and bake for about 2 minutes.
  • Repeat with the remaining batter.
  • Top with the fruit and whipped cream and serve hot.
