WINTER CITRUS SALAD WITH HONEY DRESSING



Winter Citrus Salad with Honey Dressing image

This citrus salad requires only that you overcome the notion that salads must be green; it's a novel and wonderful antidote to sorry-looking lettuce. If you're lucky and can find blood oranges, use them; same with the odd, supremely delicious and usually quite pricey pomelos.

2 blood oranges or tangerines
1 pink grapefruit
1 navel orange
Salt
1/2 small red onion or 1 shallot, chopped
3 tablespoons extra virgin olive oil
1 tablespoon sherry vinegar
1/2 teaspoon honey
Lime or lemon juice to taste
1/4 teaspoon freshly chopped tarragon or a pinch dried

Steps:

  • Peel citrus, removing as much pith as possible, and slice into wheels. Remove any pits, layer fruit on a serving dish, sprinkle with salt and garnish with chopped onion.
  • Whisk together olive oil, vinegar, honey, lime juice and tarragon until well combined; taste, adjust seasoning as needed and drizzle over salad.

Colourful, tasty and a good mix of textures. Make it cheesy by tossing in 2oz crumbled goat cheese or feta through the vegetables before serving.

1 butternut squash, cut into thin wedges
2 red onions, halved and cut into wedges
4 parsnips, cut into wedges
3 tablespoons olive oil
2 tablespoons honey
1 loaf ciabatta, roughly torn into pieces
1 tablespoon sunflower seeds (optional)
8 ounces Baby Spinach
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard

Steps:

  • Heat the oven to 425°F.
  • Put the vegetables into a large roasting tin, drizzle with half the oil and seaon to taste.
  • Roast for 20 mins turning once in a while until softened. Drizzle with the honey.
  • Scatter the torn ciabatta and sunflower seeds over the top and return to the oven for a further 5 mins or until toasted.
  • Put the spinach into a large bowl and tip in the vegetables and ciabatta. Whisk the vinegar, mustard and remaining oil together, season to taste and toss into the salad until the spinach wilts slightly.
  • Serve immediately.

1 butternut squash , cut into thin wedges
2 red onions , halved and cut into wedges
4 parsnips , cut into wedges
3 tbsp olive oil (try garlic or basil infused)
1-2 tbsp clear honey
1 small ciabatta , roughly torn into pieces (tomato and olive ciabatta works well)
1 tbsp sunflower seeds , optional
225g bag leaf spinach
2 tbsp white wine vinegar
1 tsp Dijon mustard

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Put the vegetables into a large roasting tin, drizzle with half the oil and season to taste. Roast for 20 mins, turning once in a while until softened. Drizzle with the honey. Scatter the torn ciabatta and sunfl ower seeds over the top and return to the oven for a further 5 mins or until toasted.
  • Put the spinach into a large bowl and tip in the vegetables and ciabatta. Whisk the vinegar, mustard and remaining oil together, season to taste and toss into the salad until the spinach wilts slightly. Serve immediately.

1 pomegranate
1 red apple, cored and chopped
1 green apple, cored and chopped
2 pears, cored and chopped
3 clementines, peeled and sliced
3 kiwis, peeled and sliced
3 tablespoons lime juice
2 tablespoons honey

Steps:

  • Slice the pomegranate in half crosswise. Hold the pomegranate cut side down over a medium bowl and tap the back with a wooden spoon to release the seeds. Rinse and drain.
  • Add the apples, pears, clementines, kiwis, and pomegranate seeds to a large bowl.
  • In a small bowl or measuring cup, combine the lime juice and honey and stir until incorporated.
  • Drizzle the dressing over fruit and gently toss until well coated.
  • Serve chilled.
