HOW TO MAKE HORCHATA
How to Make Horchata - Our BEST easy recipe for making the best thick and wonderfully refreshing authentic horchata from scratch. Your family will love enjoying this nutty, creamy, perfectly sweet drink all summer!

Steps:
- Bring 4 cups of water to a boil (in a kettle or a sauce pan).
- In a large heat-safe bowl add the dry rice, almonds, cinnamon stick, and salt. Pour the boiling water over the rice mixture. Stir well. Then cover and refrigerate for at least 2 hours. (Could be overnight.)
- Pour the rice mixture into the blender, including the cinnamon stick. Puree until very smooth.
- Set a fine mesh strainer (sieve) over a 10-cup measuring pitcher. Pour the rice mixture into the strainer. Allow the liquid to pour through, removing any remaining debris.
- Stir in the sweetened condensed milk, evaporated milk, and vanilla extract. Add additional cold water, until you have 9-10 cups for horchata total. (9 cups for extra-thick horchata. My kids like it a little thinner.)
- Chill until ready to use. Stir before serving. Serve over ice as-is, or with a shot of rum.

HORCHATA RECIPE
This is a simplified version of the traditional Mexican drink-Horchata. It's made with just a few pantry-staple ingredients and comes together in only 45 minutes!

Steps:
- In a medium size pot, combine the rice, water, almond milk, cinnamon sticks, cinnamon, and salt, bring to a boil. Reduce the heat to a low simmer, cover, and allow to cook for 25 minutes. Remove from heat and allow the mixture to cool to room temperature.
- Remove the cinnamon sticks and add the rice mixture to a blender along with the remaining ingredients. Blend on high for 1 to 3 minutes until very smooth.
- If you prefer a smooth consistency, pour over a mesh sieve into a large pitcher or pour in as-is. Chill until ready to serve.

- Combine the rice and cinnamon stick with 4 cups water in a blender; pulse to coarsely grind. Transfer to a large bowl and add another 4 cups water; soak at room temperature for 3 hours.
- Puree the rice mixture in a blender in batches until smooth. Strain through cheesecloth or a fine sieve into a pitcher. Mix in the sugar; chill.
- Stir the horchata well before serving. Pour into ice-filled glasses; garnish with cinnamon sticks and a dusting of ground cinnamon.
HORCHATA MADE EASY
Horchata (cinnamon rice milk) has been a favorite addition to the many Mexican meals I've had in the Bay Area. It's lightly sweet and refreshing. This is a much easier recipe than the traditional method which requires up to 3 hours to make.

- Heat water, sugar, and cinnamon in a saucepan over medium heat. Simmer until sugar is dissolved, whisking occasionally, about 5 minutes. Allow mixture to cool for 10 minutes.

- Place rice in a blender; cover and process 2-3 minutes or until very fine. Transfer to a large bowl; add almonds, cinnamon stick, lime zest and hot water. Let stand, covered, at room temperature 8 hours., Discard cinnamon stick. Transfer rice mixture to a blender; cover and process 3-4 minutes or until smooth. Add sugar; process until sugar is dissolved., Place a strainer over a pitcher; line with double-layered cheesecloth. Pour rice mixture over cheesecloth; using a ladle, press mixture through strainer., Stir in cold water. Serve over ice. If desired, sprinkle with cinnamon and serve with lime.

FAST EASY HORCHATA
I got this recipe from a friend from work, and she got it from a Mexican restaurant. This is in other words "rice water" it tastes like a rice pudding drink.The original recipe requires you to use actual rice, but this is a fast, refreshing version. The rice flour can be found at your local grocery store in the hispanic isle. Tip: I like to use the pitcher to mix everything well with a spoon and the put the finished drink in an empty milk gallon container and give it all a good shake.

- Fill a measured pitcher with 3 cups of water. Add rice flour, vanilla, cinnamon and mix well.
- This will ensure there aren't any clumps.
- Add the rest of the water to the 1 gallon measure line, condensed milk and sugar (to taste) Stir and mix well. Enjoy!
NO WAIT HOMEMADE HORCHATA
We LOVE horchata, but are always disappointed in the amount of wait time required to make it. One day I decided to try to cook the rice slightly before making the drink because I wanted it NOW! We really like it and think it tastes just a good as the original recipe we tried which calls for the rice to be soaked over night.

- Drain water from rice.
- Combine milk and rice and blend together. Strain the milk and rice mixture through cheesecloth.
