Steps:
- Microwave the cream cheese in a 12x12-inch glass pie or Pyrex dish for 1 minute, or until cheese is easily spreadable.
- Spread the cream cheese to coat the bottom of the dish completely.
- Pour the Hormel chili over the cream cheese.
- Top with shredded cheddar cheese.
- Microwave the dip for 3 minutes or until cheese has melted.

- Add the beef and pork to a cold pan, set heat to medium-low. Stir and break the meats up into small bits, mixing them together. As the juices from the meat begin to render, add the onion and saute until the onion is tender and the meat is cooked through - do not brown - just "grey" the meat. Add the tomato paste and cook it into the meat and onions. Add the water and stir well. (you should have fine pieces of meat floating in what seems like too much water).
- Stir in the spice mix. Partially cover and simmer for at least an hour so the flavors meld. You can simmer longer, if desired, up to 2 hours.
- Mix the Wondra flour with the masa in a small bowl. Add water and stir to form a thin paste. Add to the simmering chili and stir until the chili begins to thicken. If the chili is not thick enough, after about 5 minutes, make and add more of the flour/masa mix. Add slowly until you have a nice thick chili. Taste and adjust seasonings.

My husband won't eat beans but LOVES chili, so I had to come up with this variation on an old favorite. Instead, it contains lots of canned tomatoes and onion. This is great served over rice with some shredded cheese and a dollop of sour cream. Ground turkey may be substituted for ground beef.

- Crumble the ground beef into a stock pot or large Dutch oven over medium-high heat. Add the onion and garlic, and cook stirring frequently until beef is evenly browned. Drain off excess grease.
- Season with chili powder, oregano, cumin and hot sauce. Stir in the tomatoes and vinegar. Bring to a boil, then reduce heat to low, and simmer for about 1 hour - or longer if you have time. Stir occasionally to prevent burning on the bottom.

- Brown the meat with bacon grease in 4-qt dutch oven. When browned, pour off excess grease except for 2 Tablespoons.
- In a 2-qt mixing bowl, add water. Whisk in cornstarch until fully blended. Whisk in flour until fully blended. Whisk in tomato sauce until fully blended.
- Stir into the water mixture chili powder, paprika, dried onion, cumin, garlic powder, pepper and salt. Mix well.
- Add water mixture to meat in dutch oven.
- Stir in the crushed fritos corn chips.
- Bring to a boil then reduce to a simmer.
- Simmer 45-minutes. Stir well and scrape bottom of pot every 5-minutes to prevent burning.
- Serve as is or blend slightly with hand blender for a smoother chili.
- Serve over hot dogs, hamburgers, polenta, etc.
