1 teaspoon lemon juice

1 pinch paprika

Steps:

  • In a medium bowl, stir together the sour cream, horseradish and lemon juice. Season with salt, paprika, garlic salt and minced onion. Mix and then chill for about 20 minutes to let the flavors blend before you start dipping.

My mom was an adventurous cook for her day. She would try some of the oddest (to a finicky teenager) recipes and all she would have to say is, "Don't bother, you won't like that", and BAM! I would dive in and eat it to spite her. (Cunning, wasn't she!). This dip is one that I wouldn't try on a bet, were it not for my mother's challenge. Today, it is still a favorite of mine because it is relatively healthy snack food and I LOVE HORSERADISH!!! It is quick to prepare, and if you don't like it, then there is more for me! Mom, always served it with raw turnip slices and I do to. It is good as a dip for any crudite. It is also good on baked potatoes.

2 1/2 ounces dried beef (Chipped Beef)
16 ounces low fat cottage cheese
2 tablespoons prepared horseradish, Extra Hot*
2 turnips, sliced 1/8-inch-1/4-inch thick
1/4 teaspoon black pepper

Steps:

  • Rinse the chipped beef in cold running water to remove excess salt. Pat dry and stack up for easy slicing. Slice into thin strips, about 1/8" wide.Cut the strips in half.
  • In a small mixing bowl, stir beef shreds into cottage cheese until well distributed. Add the horseradish and pepper. Turn into a serving bowl and keep chilled until ready to serve.
  • Serve with sliced turnips or other dipping veggies.

Every Passover, my maternal grandfather, Irving, made beet horseradish from scratch. He was a gardener with a true green thumb when it came to tomatoes, but I can't remember if he grew his own horseradish. What I do remember is how teary-eyed everyone got when he served my grandmother's homemade gefilte fish with his beet horseradish on the side. Through the sniffles, we all expressed delight and assured him that this batch was the hottest and best yet. Horseradish is one of those flavors I have always loved. For all you other horseradish lovers out there, here's a fabulous dip. Use extra-hot prepared horseradish to guarantee those sniffles and teary eyes.

1 cup/240 ml reduced-fat sour cream
3/4 cup/105 g peeled, cored, and minced Granny Smith apple
1/4 cup/60 ml drained prepared horseradish
2 tbsp minced white onion
2 tbsp fresh lemon juice
1/2 tsp kosher or sea salt
1/4 tsp freshly ground pepper
1/4 cup/12 g finely snipped fresh chives
Roasted Fingerling Potatoes, baked potato chips, wedges of tart apples, rolled slices of rare roast beef

Steps:

  • In a medium bowl, whisk together the sour cream, apple, horseradish, onion, lemon juice, salt, and pepper. Using a rubber spatula, fold in the chives. Refrigerate at least 1 hour to allow the flavors to meld and the dip to thicken.

6 pounds small red potatoes, quartered and reserved in a bowl of cold water
3 pounds Brussel sprouts, trimmed and halved
1 1/2 pounds parsnips, peeled and cut into 2-inch sticks
1 1/2 pounds carrots, peeled and cut diagonally 1 inch thick
1 1/2 pounds small turnips, peeled and cut into sixths
3 sticks (1 1/2 cups) unsalted butter
1/3 cup drained bottled horseradish
1/3 cup cider vinegar
1/3 cup minced fresh dill

Steps:

  • In a large vegetable steamer set over boiling water steam separately the potatoes, the Brussels sprouts, the parsnips, the carrots, and the turnips for 8 to 12 minutes, or until they are just tender. In a saucepan melt the butter over moderate heat, stir in the horseradish, the vinegar, the dill, and salt and pepper to taste, and in a large baking pan toss the vegetables with the butter mixture. Keep the vegetables warm, covered, in a 200°F. oven.

I got this recipe from my sister, but have changed it to suit us. Great as a side dish for beef, lamb, or oven roasted salmon. Good vegan dish too. You can discard the garlic, or squeeze it over the vegetables as we do.

4 small beetroots, trimmed and scrubbed
2 large potatoes, scrubbed and quartered
2 small turnips, peeled and quartered
1/2 bunch dutch baby carrots, trimmed and peeled
6 tiny onions
12 cloves garlic, unpeeled
olive oil
salt and pepper
fresh parsley, chopped,to garnish
1 clove garlic, finely chopped
1 tablespoon horseradish cream
1 teaspoon mustard (I used lemon and dill)
2 teaspoons red wine vinegar
1/4 cup virgin olive oil
salt and pepper

Steps:

  • Wrap the beetroot together in foil (like a package) and place in a 190c oven for 20 minutes.
  • Place the remaining ingredients (except the chopped parsley) in a baking tray, drizzle with olive oil, and season to taste.
  • Place in the oven with the beeroot parcel and cook for 1 hour more, or until tender.
  • Cool the vegetables slightly, then peel the beetroot and tiny onions-quarter the beetroot.
  • Toss all vegetables together gently, then serve on a platter with the dressing drizzled over, scatter with chopped fresh parsley.
  • Good with beef, lamb or oven roasted salmon.
  • HORSERADISH CREAM:.
  • Combine garlic, horseradish and mustard.
  • Gradually whisk in oil and vinegar.
  • Season to taste.
