I don't know where I got this recipe originally, the card is all splattered and dirty. I wanted to post it here before I lose it.

8 cups chicken stock
3 stalks lemongrass, cut in 1 inch lengths
4 kaffir lime leaves
1 teaspoon lime zest
2 green serrano chilies, slivered
2 lbs shrimp (or mixture) or 2 lbs tofu (or mixture)
1 tablespoon thick coconut milk
2 limes, juice of
1 red serrano chilie, slivered
2 tablespoons cilantro, chopped
3 green onions, chopped

Steps:

  • Heat the chicken stock in a large pot with the lemongrass, lime leaves, lime zest and green chiles. Bring to a boil, then cover, reduce the heat and simmer for 20 minutes.
  • Add the meat and/or tofu to the stock and simmer until the meat is done.
  • Turn off the heat and add the coconut milk and lime juice. Stir to blend.
  • Pour soup into a tureen or ladle into bowls and sprinkle with red chili, cilantro and green onions.
  • Adjust individual servings to taste with additional chili, cilantro, green onions, soy sauce. fish sauce or lime juice.

2 quarts chicken broth
2 stalks fresh lemongrass, sliced on a bias in 2-inch pieces
4 kaffir lime leaves
1-inch piece fresh galangal or ginger, sliced
2 red chiles, sliced
2 tablespoons fish sauce, such as nam pla
1 1/2 teaspoons sugar
1 (8-ounce) can straw mushrooms, rinsed and halved
1 pound large shrimp, peeled with tails on
2 limes, juiced
2 green onions, sliced
1 handful fresh cilantro, chopped

Steps:

  • Bring the stock to the boil over medium heat in a saucepan. Add the lemongrass, kaffir lime leaves, galangal, and chiles. Lower the heat to medium-low, cover, and simmer for 15 minutes to let the spices infuse the broth.
  • Uncover and add the fish sauce, sugar, and mushrooms. Simmer for 5 minutes. Toss in the shrimp and cook for about 8 minutes until they turn pink. Remove from the heat and add the lime juice, green onions, and cilantro. Taste for salt and spices; you should have an equal balance of spicy, salty, and sour. It's a good idea to tell your guest's that the lemongrass and lime leaves are for flavor only and should be avoided when eating the soup.

3 cups chicken stock
1 tablespoon tom yum paste
1/2 garlic clove, finely chopped
3 stalks lemongrass, chopped
2 kaffir lime leaves
2 chicken breast halves, skinless, boneless, shredded
4 ounces fresh mushrooms, thinly sliced
1 tablespoon fish sauce
1 tablespoon lime juice
1 teaspoon green chili pepper, chopped
1 bunch fresh coriander, chopped
1 sprig fresh basil, chopped

Steps:

  • In a large saucepan, bring the chicken stock to a boil. Stir in the tom yum paste and garlic, and cook for about 2 minutes. Stir in the lemon grass and kaffir lime leaves. Place the chicken in the saucepan, and cook 5 minutes, or until no longer pink and juices run clear.
  • Mix in the mushrooms. Add the fish sauce, lime juice, and green chile pepper. Continue cooking until well blended. Remove from heat, and serve warm with the coriander and basil.
  • Prawns (approximately 1/2 pound) may be substituted for chicken in this recipe. Cook them only until opaque. If kaffir lime leaves are not available, substitute 1 tablespoon lime zest.

1 ounce dried wood ear mushrooms (also called tree ears or black fungus, optional)
7 ounces soft tofu
4 cups water
3 tablespoons soy sauce
1/2 teaspoon black pepper
1 teaspoon chopped garlic
1 1/2 teaspoons sugar
5 tablespoons rice vinegar
1/2 tablespoon hot chili sauce (sambal oelek)
1/4 teaspoon salt
1 cup bamboo shoot
1 teaspoon sesame oil
1 tablespoon cornstarch
1 tablespoon water
2 egg yolks
1 strip red pepper
fresh cilantro

Steps:

  • Soak the wood ears in warm water for 20-30 minutes until they swell up and become soft.
  • Rinse under cold water, and cut into thin ribons, discarding any hard centers; set aside.
  • Slice tofu into long thin strips; set aside.
  • Bring the 4 cups of water to a boil in a soup pot; add the soy sauce, black pepper, garlic, sugar, vinegar, sambal oelek, and salt and stir to blend.
  • Lower heat to medium and cook for several minutes.
  • Add the bamboo shoots and cook for a minute before adding the wood ears, the tofu, and the sesame oil.
  • Cook the soup for 2-3 minutes, then stir in the cornstarch which should be dissolved in the 1 tablespoonful of water.
  • Beat the egg yolks lightly and slide into the soup; turn off the heat and DO NOT STIR.
  • The egg will cook into the hot soup and stay in pieces (if you stir it will shrivel).
  • Pour soup into serving bowls and garnish with strips of red pepper and cilantro leaves.

2 ounces mushrooms, sliced (wood ear mushrooms are very nice, if you can find them)
7 ounces soft tofu, sliced in thin, long strips
4 cups water
3 tablespoons soy sauce
1/2 teaspoon black pepper
1 teaspoon garlic, chopped
1 1/2 teaspoons sugar
5 tablespoons rice vinegar
1 teaspoon chili-garlic sauce
1/4 teaspoon salt
1 cup bamboo shoot
1 teaspoon sesame oil
1 tablespoon cornstarch
1 tablespoon water
2 egg yolks, beaten
red bell pepper, cut in thin strips
fresh cilantro leaves, chopped

Steps:

  • 1. Assemble and prep all ingredients. Boil 4 cups water in a soup pot. Add soy, black pepper, garlic, sugar, vinegar, chili-garlic sauce and salt. Lower heat to medium and cook 2-3 minutes.
  • Add bamboo shoots and mushrooms and cook for 1 minute. Add tofu and sesame oil and cook 3-5 minutes. Dissolve corstarch in 1 T. water, and stir into soup.
  • Slide egg yolks into soup. Turn off the heat, and do not stir. You want the egg to stay in pieces.
  • Transfer to soup tureen and garnish with pepper strips and cilantro. Serve immediately.

1 ½ pounds uncooked medium shrimp
9 ½ cups water, divided
½ cup chopped galangal
½ cup lemon grass, cut into 1-inch pieces
6 leaf (blank)s kaffir lime leaves
2 (15 ounce) cans whole straw mushrooms, drained
2 tablespoons red curry paste (such as Thai Kitchen®)
2 tablespoons fish sauce
2 peppers Thai chile peppers, sliced
½ cup green onions, chopped
½ cup fresh cilantro, chopped
2 medium limes, juiced

Steps:

  • Peel and devein shrimp, reserving shells.
  • Combine shrimp shells and 6 cups water in a large saucepan; bring to a simmer. Cook for 45 minutes. Add galangal, lemon grass, and lime leaves; simmer 15 minutes more.
  • Strain broth mixture through a sieve into a bowl; discard solids.
  • Return broth mixture to the pan. Add remaining 3 1/2 cups water, mushrooms, curry paste, fish sauce, and chiles; bring to a boil. Stir in shrimp, green onions, and cilantro; cook until shrimp are bright pink and firm, about 5 minutes. Stir in fresh lime juice and serve.

  • Add the shrimp stock, lemongrass, kaffir lime leaves, galangal and chilies to the pot. Bring to a boil and let it boil for 3-4 minutes until you can smell the fragrance of the herbs from the pot.
  • When the soup is done simmering, add the oyster mushrooms, and bring the soup back to a boil.
  • Once the soup comes back to a boil, add the shrimp and when the soup just starts to bubble again, turn off the heat. Let the residual heat of the soup cook the shrimp completely, another minute or so.
  • Add the lime juice, fish sauce, chili paste (if using) and sugar to your soup and stir. Taste and adjust seasoning to your liking. If you're not using the chili paste, you may find you need to add a bit more fish sauce/sugar. But taste it first!

  • Heat the oil in a large pot of medium-high until shimmering hot. Add the sliced shallots and fry or about a minute. Then add the stock/water, lemongrass, kaffir lime leaves and galangal and bring to a boil. Reduce the heat and simmer this aromatic water/stock for about 10 minutes.
  • Now stir in the chicken and continue cooking until the chicken is cooked through. This should take about five minutes. Add the tamarind concentrate and stir well.
  • Stir in the mushrooms, red chilli paste, chilli oil with some of the goop at the bottom, fish sauce, chillies, tamarind and coriander (cilantro). If you are at all worried about adding too much of any one ingredients, taste as you go!
  • Once all of these ingredients have been added, taste it again and adjust the seasoning to taste. At this stage, you could also add a little sugar if you want it sweeter.
