Best Ever Bruschetta image

I went through a major bruschetta phase and tried many many recipes until I found the perfect one. This was originally Guy Fieri's but is slightly adapted to my taste after making it about a billion times. Cookingt time is marinating time.

1 baguette, cut in half length-wise and toasted
2 teaspoons minced garlic (I use the kind in a jar)
3 tablespoons extra-virgin olive oil
1/4 cup grated parmesan cheese
2 1/2 cups minced roma tomatoes (cut so fine its almost a paste)
1/3 cup thinly sliced fresh basil leaf
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1 teaspoon fresh ground pepper

Steps:

  • In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper.
  • Mix thoroughly and let sit for at least 15 minutes at room temperature to let the flavors marinate.
  • Slice the bread into individual pieces and spoon the mixture on top.

Be ready in minutes with this gooey, cheesy, go-to party dip!

Yield 24 servings of about 3 tbsp/45 mL dip

Number Of Ingredients 10

8 oz (250 g) part-skim mozzarella cheese
8 oz (250 g) reduced-fat cream cheese (Neufchâtel), softened
1/4 cup (50 mL) light mayonnaise
1 1/2 tbsp (22 mL) Herbs de Provence Seasoning Mix
3 garlic cloves
1/4 tsp (1 mL) ground black pepper
1 pint grape tomatoes
1 egg, beaten
1 frozen puff pastry sheet (from 17.3-oz/397-g pkg), thawed (see Cook's Tip)
Toasted Baguette Slices (see Cook's Tip), assorted vegetables or crackers

Steps:

  • Preheat oven to 425°F (220°C).Grate mozzarella using Microplane® Adjustable Coarse Grater.Mix cream cheese, mayonnaise, seasoning mix, garlic pressed with Garlic Press and pepper in Classic Batter Bowl; stir in mozzarella.Pump half of the tomatoes in Manual Food Processor 7-10 times or until coarsely chopped; add them to cheese mixture. Repeat with remaining tomatoes and stir them gently into cheese mixture.Scrape cheese mixture into Round Covered Baker and microwave it, uncovered, on HIGH 1-2 minutes or just until cheese starts to melt; stir halfway through cooking.Unfold pastry onto lightly floured Large Grooved Cutting Board and lightly roll seams using Baker's Roller®.Place lid of baker over pastry. Using Pizza Cutter, cut around the lid to form a circle. Using Creative Cutters, cut out and reserve two shapes from center of pastry circle.Place pastry circle over dip, lightly brush it with some of the egg and top it with cutouts; lightly brush cutouts with egg. (Discard the rest of the egg.)Bake, uncovered, 16-18 minutes or until pastry is golden brown. Remove baker from oven. Serve dip with Toasted Baguette Slices, assorted vegetables or crackers.

I created this on a whim and served it at my annual 2007 Christmas hors d'oeuvres party for my friends. I was planning to make traditional bruschetta but was worried it would get cold or soggy before all my guests arrived. It's simple and a convenient way to serve bruschetta in a party setting.

1 (28 ounce) can diced tomatoes
1 garlic clove, minced
1 teaspoon basil, dried
1 teaspoon oregano, dried
2 tablespoons onions, minced
1 tablespoon Spanish olives, chopped
2 tablespoons olive oil
1 tablespoon parmesan cheese, grated
1/2 cup parmesan cheese, grated
6 -8 cups French baguettes, thinly sliced

Steps:

  • Preheat oven to 350°F.
  • Combine tomatoes, garlic, basil, oregano, onion, olives, oil and 1 tbs. parmesan cheese in a small casserole dish. With back of spoon, smooth down top of mixture until flat.
  • Sprinkle 1/2 cup parmesan cheese evenly over top.
  • Bake at 350 F for 10-12 minutes or until heated through.
  • While this is baking, slice bread and arrange as desired. If desired, lightly toast the bread before arranging.
  • Turn off oven heat and preheat broiler to medium heat. Place tomato mixture 2-3 inches under broiler for 1-2 minutes or until cheese is lightly browned.
  • Serve immediately, allow guests to spoon the mixture onto pre-sliced bread.

1 package (8 ounces) cream cheese, softened
1/2 cup prepared pesto
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups grape tomatoes
1 carton (8 ounces) fresh mozzarella cheese pearls, drained
Minced fresh basil, optional
French bread slices (1/2 inch thick), toasted

Steps:

  • In a small bowl, mix cream cheese, pesto, salt and pepper until combined. Transfer to a greased 3-qt. slow cooker. Top with tomatoes and mozzarella cheese. Cook, covered, on low until heated though and cheese begins to melt, 1-1/2-2 hours. If desired, sprinkle with basil. Serve with toasted bread.
