2 cups cooked long grain rice
4 hard-boiled large eggs, chopped
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup mayonnaise
1 medium onion, chopped
1/2 cup chopped celery
1/4 cup lemon juice
1 teaspoon salt
1 package (15 ounces) refrigerated pie pastry
1-1/2 cups crushed cornflakes
1/4 cup butter, melted

Steps:

  • Unroll crusts into 9-in. pie plates; flute edges. Refrigerate 30 minutes. Preheat oven to 400°. Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edges are light golden brown, 10-15 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack; reduce heat to 350°., In a large bowl, combine the chicken, rice, eggs, soup, mayonnaise, onion, celery, lemon juice and salt. Spoon chicken mixture into pastry shells. Combine cornflakes and butter; sprinkle over tops. Bake on lowest oven rack until lightly browned, 20-25 minutes.

1 small red onion, cut into 1/2-inch dice (a heaping 1/2 cup)
2 sprigs thyme
Kosher salt and freshly ground black pepper
1 small carrot, peeled and cut into 1/2-inch dice (about 1/2 cup)
1/2 cup dry white wine
1/4 cup half-and-half
1/2 rotisserie chicken, skin and bones discarded, meat shredded (about 3 cups meat)
1/2 rotisserie chicken, skin and bones discarded, meat shredded (about 3 cups meat)
1/3 cup mayonnaise
1/4 cup fresh flat-leaf parsley, roughly chopped
2 ounces sugar snap peas, cut into 1/4-inch pieces (about 1/2 cup)
1 stalk celery, cut into 1/3-inch pieces (about 1/3 cup)
6 store-bought biscuits, split

Steps:

  • Melt the butter in a large skillet over medium heat. Add the onions, thyme, a large pinch of salt and a few grinds of pepper, and cook, stirring occasionally, 5 minutes; add the carrots, and continue to cook until the onions are softened and browned in spots, 3 to 5 minutes more. Add the wine, increase the heat to medium-high, bring the wine to a boil and cook until reduced by half, 2 to 4 minutes. Turn off the heat, stir in the half-and-half and mix in the chicken. Transfer the mixture to a large mixing bowl and refrigerate until cool, about 30 minutes.
  • Discard the thyme. Stir in the mayonnaise, parsley, snap peas and celery and season with salt and pepper. Divide the chicken mixture among the biscuits and serve immediately.

1/2 cup toasted slivered almonds ((Toasted in the oven for 5-7 minutes. Watch closely.))

  • 1. Heat the oven to 400°F. Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 12-inch square. Press the pastry into a 2-quart round casserole. Trim the excess pastry. Prick the pastry thoroughly with a fork. Place aluminum foil onto the surface of the pastry.
