CRAB MELTS
These special open-faced sandwiches from Donna Bennett of Washougal, Washington have wonderful crab and cheese flavor. "This recipe closely resembles a dish my husband and I enjoyed at a favorite restaurant several years ago," Donna writes.

- In a small bowl, combine the crab, mayonnaise, celery and onion. Place muffins on an ungreased baking sheet. , Broil 4-6 in. from the heat until toasted. Spread each muffin half with crab mixture. Top with tomato and cheeses; sprinkle with paprika. Broil until bubbly.

Steps:
- Preheat broiler.
- In a bowl, combine crabmeat, green onions, cheese, mayonnaisse and cayenne (or hot pepper sauce).
- Slice tomatoes into eight slices.
- On a baking sheet or broiler pan place English muffin halves and broil 3-4 inches from heat until golden (3-5 minutes); remove from oven.
- Place a tomato slice on each muffin half and top with crab mixture (about 1/2 cup per muffin half)and then sprinkle with extra shredded cheese, if desired.
- Return to oven and broil until cheese browns. (3-5 minutes).

SOUTHERN STYLE CRAB GRILLED CHEESE MELT
Oh my goodness ... this sandwich is intoxicating! I always have canned crab meat in the pantry, and was surfing the web looking for something new to do with it. This recipe graciously shared on the cooking blog Hugging the Coast.

Steps:
- Combine the first seven ingredients (crab meat to black pepper) in a bowl.
- Toast the bread lightly on both sides. Heat a skillet or griddle over medium-low heat.
- Generously spread two slices of bread with butter, dust generously with paprika, and place them butter side down in the pan. Distribute 1/4 of the cheese on each of the two slices. Spread half the crab salad on each; top with remaining cheese. Butter and sprinkle paprika on the remaining bread and place on top. Press down very gently, if necessary.
- Cook sandwich until bottom is crisp; turn over carefully and cook until other side is crisp. Cut with a serrated or very sharp knife, taking care not to press out the filling. Serve with bread & butter pickles.

Way better than a Tuna Melt! Sometimes I add a slice of tomato to this sandwich before cooking, which makes it even more delicious.

Steps:
- In a medium sized bowl place the crab or surimi and pick through to remove any bones or cartilage.
- Stir in the cheese, green onions and just enough mayonnaise to hold it all together.
- Spoon the crab on 4 slices of bread and top with remaining bread.
- Heat a griddle to medium-low heat.
- Brush tops of bread liberally with melted butter and place butter side down on hot griddle.
- Cook slowly until golden and crisp on the bottom, about 2-3 minutes.
- Brush tops with melted butter and turn to cook the other side, again slowly until bread is browned, 2 minutes more.
- Cut in half and serve while still hot.
