If you like your hot fudge a little more decadent, use all semi-sweet instead of the milk chocolate. Natural cocoa powder can be used, but will change the flavor somewhat. 2/3 cup heavy cream
1/2 cup light corn syrup
1/3 cup packed dark brown sugar
1/4 cup unsweetened dutch cocoa
1/2 teaspoon kosher salt or 1/4 teaspoon table salt
3 ounces semisweet chocolate, finely chopped
3 ounces milk chocolate, finely chopped
2 tablespoons unsalted butter
1 teaspoon pure vanilla extract

Steps:

  • In a medium pot, bring cream, corn syrup, brown sugar, cocoa and salt to a boil. Add semi-sweet chocolate and stir over moderate heat until fully melted.
  • Reduce heat to low and simmer 5 minutes. Off heat, add milk chocolate, butter and vanilla, and stir until melted and smooth. Cool to warm, and serve over ice cream, cake or anything you like. Cool to room temperature before refrigerating in an air tight container; will keep 1 week. Reheat before using.

1 cup heavy cream
4 tablespoons unsalted butter
1/3 cup packed light brown sugar
1/3 cup light corn syrup
Pinch of kosher salt
8 ounces bittersweet or semisweet chocolate (or a combination), chopped
1/4 cup unsweetened cocoa powder
1 tablespoon vanilla extract

Steps:

  • Combine the heavy cream, butter, brown sugar, corn syrup and salt in a saucepan. Bring to a simmer over medium heat, whisking. Add the chocolate and cocoa powder, reduce the heat to low and cook, whisking, until the chocolate is melted and the sauce is smooth, 1 to 2 minutes.
  • Whisk in the vanilla. Let cool 10 minutes before serving. To store, let cool completely, then cover and refrigerate up to 2 weeks; reheat before serving.

1 cup all-purpose flour
2 tablespoons margarine, melted
3/4 cup granulated sugar
1 cup brown sugar
1/4 cup cocoa
1 3/4 cups tap water, hot
2 teaspoons baking powder
1 cup walnuts, chopped
2 tablespoons cocoa
1/2 teaspoon salt
1/2 cup milk

Steps:

  • Preheat oven to 350°F.
  • Grease a 9-inch square baking pan.
  • Into large bowl, sift together flour, sugar, 2 tablespoons cocoa, baking powder and salt.
  • Stir in milk and melted margarine.
  • Hand blend in walnuts.
  • Spread in prepared dish.
  • Sprinkle brown sugar and 1/4 cup cocoa over the batter in pan.
  • Pour hot water over entire batter.
  • Bake for 35 to 40 minutes or until batter is set and sauce bubbles.
  • Let cool before slicing. this makes its own chocolate sauce.

14 large egg whites
1 1/2 c light brown sugar
1 1/2 tsp cream of tartar
1 1/4 c sifted cake flour
HOT FUDGE SAUCE
1 c heavy cream
12 oz semisweet chocolate, finely chopped
1/2 c white corn syrup
caramel ice cream

Steps:

  • 1. Heat oven to 350 degrees. In the bowl of an electric mixer fitted with a whisk attachment, beat egg whites and sugar on medium speed until foamy; add cream of tartar. Increase speed to high; beat egg whites until tripled in volume, stiff, and glossy. Transfer egg white mixture to a large bowl; fold in flour in three additions.
  • 2. Spoon batter into an unbuttered 10-inch angel-food-cake pan with a removable bottom. Run a knife through batter to pop air pockets. Bake until cake is golden in color and springs back when gently pressed, about 45 minutes.
  • 3. Invert pan onto a cooling rack or the neck of a bottle and allow cake to cool, at least 1 hour. To remove cake from pan, run a knife around sides and center tube of pan. Release cake from sides, and run a long knife along the bottom of the cake, freeing it from the tube. Serve with ice cream and hot-fudge sauce.
  • 4. HOT FUDGE SAUCE: In a small saucepan over medium heat, bring cream and corn syrup just to a simmer. Remove from heat. Add chocolate; whisk until melted. Serve immediately. Sauce can be stored in an airtight container in the refrigerator up to 1 week.
