HAMBURGER AND MACARONI HOT DISH
Hot dish or goulash, call it what you want. I grew up on this quick and easy meal. I have tweaked the ingredients a bit, but the results are just as good. Serve with a side salad for a great weekday dinner. Enjoy.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes; drain.
- Heat a large skillet over medium-high heat. Cook and stir ground beef and minced onion in the hot skillet until almost browned and crumbly, 5 to 7 minutes. Add garlic to ground beef mixture and cook until beef is browned, 2 to 3 more minutes; drain and discard excess grease.
- Stir macaroni, tomato soup, corn, Italian seasoning, and seasoned salt into ground beef mixture; top with American cheese slices. Cover skillet until cheese is melted, 2 to 3 minutes; stir well.

BEST ONE POT CHEESE AND MACARONI
This recipe uses less milk and no thickener what-so-ever! Very cheesy, too! You can either serve it from the pot, or top with buttered crumbs and put in 350 oven to brown for half an hour, but we like ours fine without.

Steps:
- Pour water and salt into a medium pot and bring to a rolling boil over high heat. Once the water is boiling, stir in the shell pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the water has cooked down a bit, about 5 minutes.
- Stir in the milk, and continue boiling for another 5 minutes. Add the Cheddar, Parmesan, pepper, and mustard; stir until the cheese melts and the sauce is thick and creamy. The starch from the pasta thickens the sauce as the pasta cooks.

My grandpa's recipe. Old-school and traditional Minnesota staple.

- Cook beef in large skillet over medium heat, stirring occasionally, until browned, about 5 minutes. Transfer beef to a bowl.
- Cook macaroni, bell pepper, and onion in the same skillet over medium heat for 3 minutes. Add cooked beef, tomato sauce, tomatoes, Worcestershire sauce, soy sauce, salt, basil, oregano, ground black pepper, chili powder, garlic powder, and hot pepper sauce. Pour in beef broth. Cover skillet and simmer until macaroni is tender, about 15 minutes. Remove lid and simmer, stirring occasionally, until thickened, 5 to 10 minutes.

HOT MACARONI
Something a little different. Hot Macaroni. I was given this recipe from my Aunt Shirley. There is nothing left when she makes it.

- Cook macaroni.
- In skillet, add a little oil to cover bottom- cut bacon into small pieces and put in pan.
- Add chopped onions, green pepper, hot peppers, salt, pepper, and paprika.
- Fry until bacon is done, but not hard.
- Add mushrooms and texas pete hot sauce.
- Drain macaroni.
- Mix all together.
- Enjoy!

- Cut hot dogs in half lengthwise; cut into 1/2-in. slices. In a large skillet, brown hot dogs over medium-high heat. Reduce heat. Add onion and butter; cook until onion is tender. - Cook macaroni according to package directions., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon. In the same skillet, saute mushrooms in drippings until tender; remove with a slotted spoon. Add the sugar, flour, salt and pepper to the skillet; gradually stir in vinegar until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened., Drain macaroni. In a large bowl, combine the macaroni, onion and celery. Drizzle with vinegar mixture. MACARONI & HOT ITALIAN SAUSAGE
A macaroni casserole is always welcome in most families. Use mild sausage or bratwurst if you prefer. I like a bit of spice so I like to add a couple of jalapenos chopped and perhaps some olives or some hot sauce. Make it as hot or as mild as you like. Good meal for those fall/winter days ahead. Serve with a green salad and crusty rolls and there's your meal.

Steps:
- Spray a skillet with oil, heat.
- Add sausage, cook until crumbly, break it up as you are cooking the sausage, pour off excess fat.
- Add mushrooms and onion, cook until tender.
- Turn sausage, mushrooms and onion into an oven proof dish (approx 9x13").
- Pour sherry into the skillet and bring to a boil, stirring constantly to scrape up the brown bits.
- Pour sherry over the sausage mixture.
- Stir in the tomato sauce, beef consommé, water and pasta.
- Bake in 375°F oven (covered) for 1 hour or until pasta is tender.
- Stir in sour cream (or cottage cheese).
- Sprinkle with parmesan and parsley.
- Serve.

- Drain and set aside.
- In a large frypan, melt 2 tablespoons butter,.
- Add chicken, bouillon and garlic,stir fry until chicken is browned.
- Remove chicken.

MACARONI AND HOT DOGS
Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Eva Smith. The printed version of this recipe makes me giggle because there is a typo where the hot dogs are called 'hot gods'. Eva didn't specify serving yield, so I am guessing.

- Melt butter in Dutch oven.
- Cut hot dogs in half and then into small pieces.
- Simmer onion, pepper and hot dogs in butter for about 10 minutes or until brown.
- Sprinkle macaroni over top.
- Add salt, tomatoes and water.

- Brown ground beef and drain off grease.
- Cook macaroni according to package directions.
- In a large pot or casserole, combine ground beef, noodles, tomatoes, corn and soup (use soup as is from the can, do NOT add anything to it).
- Simmer in large pot on stove, or bake at 350 degrees in casserole dish until heated all the way through.
- Top with your favorite variety of shredded cheese before serving.
