ONION SOUFFLé RECIPE
Is this classic Southern side part of your Easter celebrations? This old-school onion soufflé recipe came to us back in 1979 from Mrs. James S. Tiffany of Dallas, Texas. This recipe, unlike other onion soufflés that are more casserole-like, relies on just onions and eggs for its fluffy consistency. One thing that also sets this onion soufflé apart from the pack is its sweet taste. The onions provide the savory bite, yes - but, a few tablespoons of sugar in the mixture make this soufflé a little more reminiscent of sweet potato casserole rather than a savory pudding. Finely chopped pecans mixed with a little sugar give a crunchy topping to this Southern recipe. If you're hoping to add to your Passover menu, this dish is easily modified to fit the bill; simply omit the all-purpose flour or replace with almond flour. - Combine onion, 2 tablespoons butter, and water in a medium saucepan; cover tightly, and cook over medium heat 15 to 20 minutes or until water is absorbed.
- Mash onions; stir in flour, 3 tablespoons sugar, 1 tablespoon butter, half-and-half, and salt. Add egg yolks, mixing well.
- Beat egg whites until stiff but not dry; fold into onion mixture. Spoon into a buttered 1-quart casserole; sprinkle with 1/2 teaspoon sugar and pecans. Bake at 350˚ for 30 minutes or until firm.

- Preheat oven to 375F.
- Spray a 2-quart shallow baking dish with cooking spray.
- In a mixing bowl and using the paddle beaters, combine cream cheese and Boursin cheese. Mix until incorporated and creamy.
- Add in grated Parmesan, Gruyere and onion. Mix together well.
- Pour the mixture into the prepared dish.
- Bake at 375F for 45-60 minutes or until the top is turning golden brown.
- Remove from oven - let cool 10 minutes then serve with favorite crackers, chips and/or vegetables.

- Preheat oven to 425ºF. In the bowl of a food processor combine onion, cream cheese, Parmesan cheese and mayonnaise. Process until completely smooth. Add cayenne and fold in chives. - Preheat oven to 425°F. Butter four 1 1/4-cup soufflé dishes. Melt 2 tablespoons butter in large saucepan over medium heat. Add onion and leek; sauté 3 minutes. Mix in 1 1/4 cups whole milk and 1/2 teaspoon salt, then grits; bring to simmer. Reduce heat to low, cover, and cook until thick, stirring occasionally, about 5 minutes.
- Meanwhile, whisk remaining 1/4 cup milk and yolks in small bowl to blend.
- Remove grits from heat. Stir in yolk mixture, then green onions and 3/4 cup cheese. Beat whites in medium bowl until stiff but not dry. Fold into grits in 3 additions. Divide mixture among prepared dishes (mixture will come all the way to top of dishes). Sprinkle with 1/4 cup cheese.
- Bake soufflés until puffed and brown on top, about 18 minutes. Serve immediately.

HOT VANILLA SOUFFLE

- Preheat the oven to 350 degrees F. Brush 4 to 6 individual souffle dishes (or a 7-cup souffle dish) well with melted butter. Put the sugar inside one dish and toss to coat, then tip the excess sugar into the next dish and repeat. Place the dishes in the refrigerator to chill.
- Reserving 1/3 cup of the milk, place the remaining 1 cup in a large saucepan. Add the vanilla bean and heat just to a boil, then turn off the heat and set aside to let the vanilla bean infuse for 10 minutes. Meanwhile, in a medium bowl, whisk the 1/3 cup granulated sugar, the flour, and the reserved 1/3 cup milk. Add a little of the hot milk and whisk to combine, then add the flour mixture to the hot milk mixture in the saucepan. Bring to a simmer over medium heat, whisking occasionally. Simmer just until thickened, about 1 minute. Turn off the heat. Add the butter, stir, cover, and set aside 15 minutes. Remove the vanilla bean and whisk in the egg yolks.
- In a mixer fitted with a whisk attachment (or using a hand mixer), whip the egg whites in a clean dry bowl until soft peaks form. Add the remaining 1 1/2 tablespoons sugar and continue whipping until stiff and glossy. Fold into the milk mixture.
- Pour the mixture into the prepared dishes, filling them 3/4 full. Run your thumb around the inside rim of each dish, making a shallow "moat" around the edge of the batter. This will help the souffles to rise straight up. Dust the surfaces with confectioners' sugar. (The souffles can stand at this point for up to 30 minutes.) Bake in the center of the oven until puffed and light golden brown, 20 to 30 minutes. Do not open the oven door unless absolutely necessary.
- Satin Chocolate Sauce: Combine the 2 chocolates over simmering water in the top half of a double boiler. Stir constantly until melted, then whisk in the syrup and water without removing the double boiler from the heat. Whisk until smooth and shiny. (The sauce can be made up to 48 hours in advance and refrigerated. To rewarm, stir over low heat or heat in a microwave.) At the table, serve the hot souffles by poking a hole in each one and pouring chocolate sauce into the hole, then drizzling sauce over the tops. For a large souffle, spoon onto dessert plates and drizzle sauce on each serving.
