ITALIAN MEATBALL SUB SANDWICHES
These hearty sandwiches are terrific for weekends and watching football. Kim Marie Van Rheenen of Mendota, Illinois simmers the meatballs in a tangy barbecue sauce rather than the traditional Italian red sauce.

- Cut a thin slice off the top of each bun; scoop out bread from inside. Cover buns and tops with plastic wrap; set aside. Crumble 1/3 cup of the removed bread and place in a bowl. Add the beef, egg, milk, diced onion, salt and pepper; mix well. Shape into eight meatballs, about 1-1/2 in. each. , In a nonstick skillet, cook meatballs for 15-20 minutes or until no longer pink. Remove with a slotted spoon; set aside. In the same skillet, saute green pepper and sliced onion in oil until tender. Remove with a slotted spoon; set aside. Stir flour into skillet. Add chili sauce and water. Bring to a boil; cook and stir for 1-2 minutes. , Stir in brown sugar and mustard. Add meatballs, green pepper and onion; cover and simmer for 15 minutes. Meanwhile, warm buns at 325° for 8-10 minutes. Spoon meatballs and sauce into buns; replace tops.

- Preheat oven to 400 degrees F (205 degrees C).
- Mix together onions, bread crumbs, Parmesan cheese and ground beef. Roll into 1 inch diameter balls, and place in a baking pan. Bake for 15 to 20 minutes, or until beef is no longer pink. Reduce the oven temperature to 350 degrees F (175 degrees C).
- Arrange the bread cubes in a single layer in an ungreased 9x13 inch baking dish. Mix together the cream cheese, mayonnaise, Italian seasoning and black pepper until smooth. Spread this mixture over each bread cube. Sprinkle with 1/2 cup of the grated mozzarella cheese.
- In a large bowl, mix together spaghetti sauce, water, and garlic. Gently stir in meatballs. Pour over the bread and cheese mixture in the baking pan. Sprinkle the remaining mozzarella cheese evenly over the top.
- Bake at 350 degrees F (175 degrees C) for 30 minutes, or until heated through.

Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.
- Preheat an oven to 425 degrees F (220 degrees C).
- Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
- Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

- Preheat oven to 350º. Cut rolls horizontally in half; place roll bottoms in a greased 11x7-in. baking dish. Mix mayonnaise and pesto until combined. Spread over cut sides of rolls. HOT OR NOT HOT ITALIAN MEATBALL SANDWICHES
Everyone loves these zippy, oversized sandwiches. If you like spicy, add the roasted banana peppers to the sauce just before serving or play it safe and serve the peeled, chopped peppers on the side. I like to serve these on ciabatta bread but kaiser rolls work great too. These are fairly easy to make and taste soooo good!

- In a bowl, combine ingredients for meatballs, except for oil, and mix well. Form into 8 balls of uniform size.
- In a skillet, heat oil over medium-high heat. Add Meatballs, in batches, if necessary, and brown on all sides. Transfer to a slow cooker. Drain off all but 1 tbsp fat from pan. If you used extra-lean meat, you may have to add oil to reach 1 tablespoons
- In the meantime, preheat oven to 400 degrees. Roast the peeled and sliced banana peppers on a baking sheet, turning two or three times until the skin on all sides is blackened. This takes about 25 minutes.
- To make Tomato Sauce: Reduce heat to medium. Add onions and celery to pan and cook, stirring, until softened. Add garlic, oregano, salt, pepper and cloves and cook, stirring for 1 minute. Stir in tomatoes and wine, bring to a boil and cook, stirring until mixture is reduced by 1/3rd, depending upon the size of your pan, about 5 minutes. Pour over meatballs, cover and cook on Low for 6-8 hours or on High for 3-4 hours, until meatballs are no longer pink inside.
- Place 1 to 2 meatballs on one half of kaiser bun or ciabatta bread, spoon additional sauce over all and top with the other half of the bun. Serve with a small bowl containing the roasted banana peppers and another containing grated Parmesan Cheese. Allow people to garnish to taste. You may need a knife and fork!
