4 cloves garlic
3 ¼ cups crushed tomatoes
½ bunch cilantro, chopped
1 teaspoon ground cumin
1 pinch dried oregano, or to taste

  • Combine onion and garlic in a food processor; process until finely chopped.
  • Pour tomatoes into a bowl. Stir in chopped onion and garlic. Add cilantro, cumin, oregano, and parsley.

When fresh tomatoes from my garden start ripening faster than I can eat them fresh, I make this salsa. I modified the recipe to match my taste for sweet salsa with just a bit of zip. I freeze peeled tomatoes so that I can have the garden-fresh taste in winter, too.

8 tomatoes, peeled and coarsely chopped
½ onion, chopped
1 (4 ounce) can diced green chilies
¼ cup white vinegar
2 tablespoons brown sugar
½ teaspoon garlic powder
½ teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon ground coriander
salt to taste
hot pepper sauce to taste

Steps:

  • Combine the tomatoes, onion, green chiles, vinegar, brown sugar, garlic powder, cumin, oregano, coriander, salt, and hot sauce in a Dutch oven or large pot over medium-low heat. Simmer, stirring occasionally, until the salsa reaches your preferred consistency, about 3 hours. Store in refrigerator until using.

1 (4 ounce) jar pimientos, drained
2 tablespoons minced parsley
2 tablespoons minced green onions
1/2 teaspoon grated lime rind
1 1/2 tablespoons lime juice
1 1/2 tablespoons sugar
1/4 teaspoon crushed red pepper flakes
1/2 papayas (can sub cantelope, if you must) or 1 ripe mango, pared, seeded, chopped (can sub cantelope, if you must)
48 Nabisco Triscuits (or other crackers)

Steps:

  • Pare and halve cucumber, remove seeds, discard, chop cucumber finely.
  • Mix cucumber with pimentos, chopped as necessary to make a finely textured salsa, the parsley, green onion, lime rind, lime juice, sugar and red pepper flakes.
  • Stir in papaya or mango for a tropical taste, cantaloupe will do in a pinch.
  • Cover and chill until serving time.
  • Serve as a dip or spread for Triscuits.

2 medium onions
12 garlic cloves, peeled
3 teaspoons barbecue seasoning, divided
2 pounds tomatillos, husks removed (about 12)
2 pounds plum tomatoes (about 8)
6 jalapeno peppers
1-1/2 cups cider vinegar
1-1/4 cups packed brown sugar
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/3 cup minced fresh cilantro

Steps:

  • Add wood chips to grill according to manufacturer's directions. , Cut onions in quarters; place in a small bowl. Add garlic and 1-1/2 teaspoons barbecue seasoning; toss to coat. Arrange on grilling grid; place on greased grill rack. Grill, covered, over medium heat 10-15 minutes or until tender, turning occasionally., Meanwhile, cut tomatillos, tomatoes and jalapenos in half; place in a large bowl. Add remaining barbecue seasoning; toss to coat. Grill in batches, covered, over medium heat 4-6 minutes or until tender, turning occasionally., When cool enough to handle, chop vegetables. 2 cups white vinegar

2 serrano peppers, seeded and chopped
1/2 cup sugar
1/2 cup minced fresh cilantro
1/2 cup bottled lemon juice
3 garlic cloves, minced
4 teaspoons ground cumin
1 tablespoon salt
2 teaspoons dried oregano
1 teaspoon hot pepper sauce

Steps:

  • In a Dutch oven, bring 2 quarts water to a boil. Using a slotted spoon, place tomatoes, a few at a time, in boiling water for 30-60 seconds. Remove each tomato and immediately plunge into ice water. Drain and pat dry. Peel and finely chop tomatoes to measure 9 cups; place in a stockpot., Stir in remaining ingredients. Add water to cover; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, about 30 minutes., Ladle hot mixture into hot 1-pint jars, leaving 1/2-in. headspace.
