OVEN-DRIED ORANGE SLICES
For a fun two-ingredient garnish for a cocktail or a mocktail, make these easy dried orange slices. The hardest part of this recipe is slicing the orange thinly, beside that the oven does all the work.

- Preheat oven to 200 degrees. Line a baking sheet with a nonstick baking mat. Top with orange slices in a single layer, and generously dust with sugar. Bake until the peels are dry and the flesh is translucent, about 2 1/2 hours.

Steps:
- Arrange the citrus slices over two baking trays lined with baking parchment so they're in a single layer. Heat the oven to 110C/90C fan/gas ¼. Bake for 2 hrs until firm and dry, turning the trays around halfway through. Check after 1 hr 15 mins, removing any orange slices that are drying out too quickly, then continue to cook the rest.
- Leave to cool completely on the tray, then package with the garnishes of your choice.

- Preheat the oven to 200F. Slice the oranges into 1/8-1/4 inch slices. Try to get them as uniform as possible for even dehydrating.
- Use a towel to blot as much of the juice from the oranges as possible. This will make the drying process much quicker.
- For a more translucent look, you can sprinkle the orange slices with a little bit of white sugar but this is optional.
- Place the orange slices on a cookie sheet. You can either place them on parchment or lay them out on a cookie cooling rack over the cookie sheet. This allows the air to circulate better and you won't have to turn the slices as often.

- Arrange the orange slices on the trays of your food dehydrator. You can butt the orange slices up against each other to get as many orange slices as possible on each tray. Fill all of the trays and stack them on the dehydrate base.
