Steps:
- To die your eggs green, first separate the yolks from the whites. Do it carefully so that your yolk remains in tact. I put each component into a separate bowl. So for those 2 eggs I used 4 bowls.
- add a couple drops of green food coloring to the egg whites and whisk it in until the coloring is well incorporated. Carefully slide the egg yolk back onto the egg white.
- Melt a tablespoons or two of butter in a skillet over medium heat.
- Slide the egg onto the skillet. Cover with a lid or aluminum foil. Reduce heat to medium-low and cook for about 2 minutes.
- It is done when the whites are completely set on top around the yolk. If you want the yolk to set as well, just reduce the heat all the way to low and cook a couple minutes longer.
GREEN EGGS & HAM
When my kids were all little they loved Dr. Seuss, and his book Green Eggs and Ham was their favorite. In an effort to get them to eat eggs, I came up with the idea of making 'Green Eggs & Ham' for breakfast. They loved it and would often demand it for breakfast. Just multiple the ingredients by the number of small children you are serving. If the kids are a little older, then you can double serving sizes. This recipe also served as a good 'science experiment' when the kids were learning about primary and secondary colors...after-all, yellow and blue make green! :-) I look forward to the day when I'll be able to make 'Green Eggs & Ham' for my grandkids.

- Crack egg into a small bowl.
- Add milk and blue food coloring.
- Whisk together.
- Add diced ham.
- Pour into preheated and greased skillet.
- Stir a couple times while cooking until water begins to separate from eggs (this is moisture from the milk).
- Serve immediately with hot toast and jelly and juice.

- Separate the yolk from the white. Crack open an egg and hold it over a cup. Pass the yolk back and forth between the two shells. Catch the whites in the cup. You can make two eggs if you are really hungry! Ask an adult to help you with this step.
- Add 1 drop of food coloring to the yolk. Leave the yolk in its shell or hold it gently in your hand. You can also put it into a small dish. Add 1 drop of green food coloring to the yolk. Gently spread it across the entire yolk. Don't press too hard, or you will break the yolk. If you are having trouble with this, stir 1 drop of green food coloring into the whites instead. You'll have reverse green eggs and ham.
- Gently wipe off any excess dye with a paper towel. Set the yolk aside when you are done. If you don't do this, some of the green may get into the whites and ruin the effect. In the book, only the yolks were green. The whites were still white. Skip this step if you added the food coloring to the whites.
- Heat some butter or oil in a pan over medium heat. Place a pan on the stove. Add 1 teaspoon of cooking oil or butter. Turn the heat up to medium-low and wait for it to get hot. Tilt the pan around so that the entire surface is coated with melted butter or oil. You are ready for the next step when the butter melts or the oil starts to sizzle. Ask an adult to help you for this.
- Cook the whites on the saucepan. Pour the whites into the saucepan. Cook them until they start to turn white.
- Add the yolk and continue cooking. Once the egg whites turn white, gently place the yolk on top. Wait a few minutes, then cover the pan with a lid. Let the egg cook for 1 to 2 more minutes before checking on it. You want the whites to be set. The yolk can be as soft or as hard as you want it to be.
- Move the egg to a plate. Once the egg is done, slide a spatula under it. Lift the spatula up and transfer the egg to a plate. Covering the pan with a lid will help the egg cook faster.
- Paint the ham green with more food coloring. Place a drop of food coloring on a slice of ham. Spread it around with your finger or a basting brush. Flip it over, and coat the back too. Pat any excess dye off with a paper towel. If you want to cook the ham, use Canadian bacon.
- Fry the ham if you want to. You can eat the ham cold, but it will taste much better if it is warm! Place it onto the pan and let it cook until the edges start to turn crispy.
- Serve the green egg and ham. Place the green egg and ham onto a plate. Add some salt and pepper, then dig in!

- Place 2 eggs in a saucepan, cover with water and bring to a boil. Cook 8 to 10 minutes. Cool in a bowl of ice water. Peel the eggs, then separate the whites and chop them. Mash the yolks in a bowl, then whisk in 2 tablespoons warm water, the pickling liquid and mustard. Gradually whisk in the olive oil. Add 2 tablespoons parsley, the chives, tarragon, egg whites, pickles, 1/4 teaspoon salt, and pepper to taste.
- Combine the flour, the remaining 6 tablespoons parsley and a pinch of pepper in a shallow dish. In another dish, beat the remaining egg with the milk. Dip each piece of ham in the flour to coat both sides, then dip in the milk mixture and re-dip in the flour mixture.
- Heat 1/8 inch of olive oil in a large skillet over medium-high heat until sizzling. Fry the ham in batches until golden, about 4 minutes per side. Transfer to a paper-towel-lined plate. Fry the capers in the skillet until crisp, about 1 minute. Sprinkle the ham steaks with the capers, and serve the egg mixture on the side to spoon on top.

- Peel and pit the avocado. With a fork, coarsely mash the eggs and avocado to mix but leave chunky. Season with salt and pepper. Spread egg mixture evenly on bottom half of the 4 rolls. - Place arugula, parsley, basil, and cheese in the bowl of a food processor; with the machine running, slowly add olive oil until a smooth paste forms. Season with salt and pepper and set pesto aside.
- In a large bowl, whisk together eggs with 1/4 cup pesto, saving any remaining pesto for another use. Season egg mixture with salt and pepper.
- Melt butter in a large skillet over medium heat. Using a heatproof rubber spatula, gently pull the eggs from the side of the skillet. As the eggs start to set, stir them gently until curds form. Serve immediately with ham.

- In a greased 11x7-in. baking dish, layer broccoli and eggs. Combine the mayonnaise, mustard, ham and onions; spread over eggs. In a saucepan, melt butter; add flour. Cook and stir until bubbly. Gradually add milk, salt and paprika; cook and stir until boiling. Cook and stir 2 minutes more. Remove from the heat; stir in cheddar cheese until melted. Pour over casserole. - Pour the green food coloring in a bowl and gently roll the egg white halves in it. Your fingers will turn very green unless you use surgical gloves.
- Place the whites, hollow side down on a cake rack over a plate or tray to allow to drip-dry.
- While whites dry, mix the thoroughly mashed yolks with mayonnaise, mustard, and finely chopped ham.
- Season with pepper to taste. No salt is needed as ham is salty.
- Add green pepper, carrots, or onion, if using, and mix well.
- Before filling the whites, gently dab the green egg halves with paper towels to remove excess food coloring.
- When filled place in egg tray or a dish, cover with saran wrap, and chill until serving time.

- Heat a 10-in. nonstick skillet coated with cooking spray over medium heat. Whisk the eggs, milk and pesto.
