HIBISCUS TEA

Steps:
- Bring water to light boil, turn off heat add the hibiscus flowers and cinnamon sticks. Cover and steep for 20 minutes.
- Strain tea into desired container, add sugar and orange slices and serve over ice. Garnish each glass with a lemon slice.
- Chef Notes: This tea recipe can easily be doubled for a larger serving. When using herbs in tea making, longer is not better. Heating the herbs for extended time can release unfavorable qualities and bitterness found in herbs. The key is to add MORE herbs to strengthen flavor.

- In a large saucepan combine the water, flowers, and ginger. Bring to a simmer and cook for 20 minutes. Add sugar and stir until dissolved then strain through a fine strainer. Let juice cool and then chill in refrigerator until needed.
- Serving Suggestions: This juice is great alone or mixed with other juices or cocktails.

AGUA DE JAMAICA (HIBISCUS WATER)
This drink is served throughout Mexico. It is nice and refreshing. It is similar to a tart cranberry tea drink. You may add more or less sugar to your taste if you prefer. Enjoy!

- Place 6 cups of water in a large saucepan; bring to a boil. Stir in the hibiscus petals, cinnamon, cloves, nutmeg, and allspice. Reduce heat to medium-low, and gently simmer until the water has turned a deep red, 30 to 45 minutes.n
- Stir the chopped piloncillo into the hibiscus water until dissolved, then set aside to cool 15 minutes. After cooling, strain the warm liquid into a 1 gallon pitcher through a wire mesh strainer. Squeeze as much liquid from the petals as you can, then discard the petals. Stir in the white sugar until dissolved, then pour in enough cold water to fill the pitcher. Serve immediately or let stand overnight for best taste.n

- Add the tea bags to a heat proof liquid measuring cup. Bring 1 1/2 cups filtered water to a boil. Add the hot water to the tea. Stir and allow to steep for 4 minutes (or for as long as the package instructions say). Stir in agave nectar. Once steeped remove tea bags and add 1/2 cup ice to cool the tea down.
- To a large pitcher add the oranges and strawberries. Stir in the cooled hibiscus tea and the red wine. Cover and refrigerate for at least 2 to 6 hours before serving.
- Give the sangria a good stir. Poor it into the serving glasses, along with a few pieces of boozy fruit. Garnish the glasses with fresh orange and strawberry slices. Drink within 48 hours.
