RASPBERRY LIME VINAIGRETTE
This raspberry lime vinaigrette is fruity, tangy and sweet. Enjoy it drizzled on salads, meats, fish or grilled vegetables.

Steps:
- Puree the raspberries in a blender. Strain the seeds out using a fine mesh strainer.
- Return the puree to the blender and add the oil, vinegar, lime juice, mustard, honey, salt and pepper.
- Blend on low until well combined.
- Transfer the vinaigrette to a container and refrigerate for at least 20 minutes.
- Store the raspberry lime vinaigrette in a airtight container in the fridge for up to 4 days.
- Enjoy!

- 1. Place water, vinegar, salt, honey, basil, and raspberries into the Vitamix container in the order listed and secure lid.
- 2. Select Variable 1.
- 3. Turn machine on and slowly increase speed to Variable 5. Remove lid plug and drizzle olive oil in a slow stream through the lid plug opening.
- 4. Replace lid plug and turn to Variable 10, then High. Blend for an additional 10 seconds.

- In a small sauce pan, over medium heat, combine raspberries, 2 Tbsp brown sugar and lime zest and mix well. Cover and cook for about ten minutes, stirring often. Blend the berries, carefully, with an immersion hand blender. Do be careful because the mixture is not too deep.
- Let the berry mixture cool to room temperature, in the mixing bowl.
- Add oil, vinegar, lime juice, sugar, salt and pepper. Whisk vigorously for a few seconds.
- Refrigerate in the air tight container.
