Part naughty, part nice, these sweet-and-spicy chicken snacks make a great appetizer for a Halloween gathering.

30 chicken wing drummettes (about 3 lb)
1 can (7 oz) chipotle chiles in adobo sauce, chopped
1 cup zesty Italian dressing
1 jar (12 to 17 oz) caramel topping (3/4 to 1 cup)

Steps:

  • Cut off excess skin from each drummette; discard. Place drummettes in large resealable food-storage plastic bag. Add chopped chipotle chiles and adobo sauce and dressing; seal bag. Turn bag to mix ingredients and coat drummettes. Refrigerate at least 4 hours but no longer than 24 hours, turning bag occasionally.
  • Heat oven to 425°F. Place sheet of foil in bottom of broiler pan. Arrange drummettes on foil. Bake 15 minutes; drain if necessary. Meanwhile, to make sauce, transfer marinade from bag to 2-quart saucepan; stir in caramel topping. Heat to boiling over medium-high heat; reduce heat to medium-low, and simmer.
  • Reduce oven temperature to 375°F; brush drummettes with sauce and bake about 30 minutes longer, brushing every 15 minutes with sauce, until browned and juice is clear when thickest part is cut to bone (180°F). Serve drummettes with sauce.

Canola oil, for frying
24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

1 large white onion, chopped
½ cup honey
½ cup brown sugar
¼ cup soy sauce
¼ cup butter
2 teaspoons mustard powder
1 ½ teaspoons garlic, minced
5 pounds chicken wings

Steps:

  • Stir onion, honey, brown sugar, soy sauce, butter, mustard powder, and garlic together in a saucepan over medium heat; cook until hot, about 5 minutes.
  • Spread chicken wings in an even layer into a shallow baking dish; pour sauce over the wings.
  • Marinate wings in refrigerate 1 hour to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake the chicken wings, turning occasionally, until no longer pink at the bone and the juices run clear, about 90 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

4 pounds whole chicken wings
Oil for deep-fat frying
1/4 cup butter
1/4 cup honey
1/4 cup barbecue sauce
4 to 6 tablespoons hot pepper sauce
3 tablespoons vinegar
3 tablespoons prepared mustard
1/4 teaspoon garlic salt
Celery and carrot sticks
Blue cheese or ranch salad dressing

Steps:

  • Cut wings into 3 sections; discard wing tip section. In a deep cast-iron or electric skillet, heat oil to 350°. Fry chicken wings, a few at a time, about 9 minutes or until golden. Drain on paper towels; place in a large bowl. , In a small saucepan, combine the next 7 ingredients; cook and stir 5-10 minutes. Pour over cooked wings; let stand 10 minutes. With a slotted spoon, remove wings from sauce and place them in a single layer on greased baking sheets. , Bake at 350° for 15 minutes. Serve hot with vegetable sticks and dressing for dipping.

1 teaspoon garlic powder
½ teaspoon ground black pepper
1 cup tomato-based hot pepper sauce
2 tablespoons vinegar-based hot pepper sauce
1 teaspoon garlic powder
¼ cup grated Parmesan cheese
3 tablespoons butter, melted

Steps:

  • Preheat an outdoor or indoor grill to a high heat. Lightly grease the grill.
  • Season wings with garlic powder and ground black pepper. Cook wings on the preheated grill until they are very crispy. Turn the wings frequently as they will burn easily.
  • While the wings are grilling, in a large bowl, combine both hot sauces with garlic powder, Parmesan cheese and melted butter.
  • When the wings are finished cooking, place them in the large bowl of hot sauce mixture and stir until they are coated.

½ cup flour
1 teaspoon garlic powder
½ teaspoon pepper
½ teaspoon salt
2 lb chicken winglets, and/or chicken drumlets
oil, for frying
1 tablespoon butter
1 tablespoon garlic, minced
1 tablespoon ginger
½ cup soy sauce
5 tablespoons honey
1 tablespoon brown sugar
1 teaspoon sesame seed
scallion

Steps:

  • Mix flour, garlic powder, pepper, and salt in a small bowl.
  • Coat each chicken wing with a generous layer of the flour mixture.
  • Pour ¼ inch (6 mm) of oil into a shallow pan, and bring it to a medium high heat.
  • In small batches, fry the chicken wings for 4 minutes on each side.
  • Remove from the oil and let rest on a paper towel.
  • Over medium-high heat, melt the butter and add the garlic and ginger.
  • Add soy sauce, honey, and brown sugar to pan and reduce for 5-7 minutes, stirring occasionally.
  • Add the fried wings directly into the sauce pan and stir until the wings are covered in the sauce, then sprinkle with sesame seeds.
  • Serve with scallions on top.

No frying or flour involved! This is from this year's edition of Pillsbury Halloween cookbook. I plan to make it for my party this weekend so I'm posting it here, so I can add it to my menu! Tip: dump the whole can of chipotles into a food processor to chop. Cooking time reflects refrigeration time. *Update!* These turned out great! So easy and sooo good! I didn't have time to refrigerate them for 4 hrs, I did 2 1/2 hrs for 6 lbs and they were delicious! I'm assuming they'd be even more flavorful for the suggested 4-5 hrs marinating time! I also used frozen ice-glazed, ready-to-use chicken wings for a shortcut! So go ahead and try it they were great!
