HUBBY'S ALL TIME FAVORITE SAUSAGE GRAVY
My husband spent some time living down south while he was in the Coast Guard. His all time favorite dish from that area is "Biscuits and Gravy". I tried for 8 years, unsuccessfully, to come up with a version of sausage gravy to satisfy his craving and fond remembrances of "southern" sausage gravy. Until I found this little gem. It's a combination of a few recipes posted in response to a request I made in the 'Zaar "Recipe Request" form last year. I make it with MaryAlice's Baking Powder Biscuits (#87258) every time.

Steps:
- Cook sausage and onion in skillet over medium heat.
- Drain all but 2 tablespoons drippings.
- Stir flour into sausage and drippings. Cook until golden.
- Gradually stir in milk and seasonings.
- Bring to a boil; cook and stir for 2 minutes or until thick.

HOMEMADE SAUSAGE GRAVY
Sausage Gravy and Biscuits is one of the easiest and most loved breakfast and brunch dishes in America. You only need 25 minutes and a few simple ingredients to make this classic dish!

Steps:
- Cook sausage in a large skillet, breaking up into small pieces as it cooks.
- Once fully cooked, add butter and mix well until melted and mixed together.
- Add flour and mix together.
- Add milk 1/2 cup at a time, stirring well after each addition. Mixture will become very thick and then slowly thin out. If you add all of milk at once it will clump. Add it slowly so that it will be a smooth gravy. This is called making a roux.
- Once all milk is added add salt and pepper to taste.
- Serve over biscuits.

This is a simple and great recipe for sausage gravy that you can serve over hot biscuits. This is a great breakfast treat. Hearty and delectable.

Steps:
- In a large skillet over medium high heat, saute the sausage for 10 minutes, or until browned. Stir in the margarine until well blended, then stir in the flour until mixture is thick and pasty.
- Reduce heat to medium low and slowly add the milk, stirring constantly, until mixture is thick and bubbly and to desired consistency. Season with salt and pepper to taste.

- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
- Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
- Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

- 1. Using a large frying pan, coat bottom with a scant 1/4" Olive oil. Heat oil and add a thin 2" to 2 1/2" Sausage pattie (per person) to the pan. Fry one side of the patty till it is no longer pink, turn it over, and while the other side is browning, cut the sausage pattie into small tidbits. (Photo)
- 2. After the sausage is sufficiently browned, sprinkle white flour over the sausage crumbles and stir around in the pan until a paste like substance is made, and all of the pan's grease(there won't be much), is absorbed. Add milk to the pan (3/4 C per person - approx.), and bring the temperature up to a slow rolling boil, be sure to watch very closley at this point so that the gravy doesn't scorch. Add salt, pepper and garlic powder to taste, while stirring the gravy until it thickens to the desired consistancy, taking care to cook the flour/milk combo for several minutes to get rid of that floury taste! (If gravy is too thin, sprinkle and mix in a little more flour, if too thick, slowly add more milk.)
- 3. Remove from heat and serve sausage gravy over warm biscuits that have been cut in half.(Photo) You can use your favorite biscuit recipe, or buy frozen or bakery biscuits. If you are lucky enough to live in the South, you can most likely find Southern Biscuit Mix in your local grocery stores...it's the very best for sure! ENJOY!
