If you like Hushpuppies then you will love this, instead of the cornbread mix use premade hushpuppies, or hushpuppy mix. Food.com recipe makes does not recognize hushpuppies

Steps:
- Use food processor to turn hushpuppies to bread crumbs add shredded cheese to this mixture as well.
- Mix together eggs and milk.
- Dip Chicken breast in egg and milk and then dip into hushpuppy crumbs, crusting both sides.
- Place crusted chicken on sprayed sheet pan.
- Bake in preheated oven at 350 until outside is browned and inside has reached 160 degrees. 15-30 minutes depending on oven.

SIMPLE BAKED CHICKEN BREASTS

- Preheat convection oven to 400 degrees F (200 degrees C).
- Rub chicken breasts with olive oil and sprinkle both sides with salt and Creole seasoning. Place chicken in a broiler pan.
- Bake in the preheated oven for 10 minutes. Flip chicken and cook until no longer pink in the center and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Remove chicken from pan. Pour water into the pan, while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add more water if needed to dislodge the browned bits; serve alongside chicken.

- Preheat oven to 350 degrees F (175 degrees C). Lightly butter a baking dish.
- Stir 1/4 cup melted butter and salt together in a bowl.
- Arrange chicken in the baking dish. Brush butter mixture onto the chicken until thoroughly coated, pouring any extra over the chicken.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, about 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I have not tried this recipe yet but it sounds good! I found it on a package of Martha White Hush Puppy Mix. This bake would go perfectly with fried shrimp or fish.

- Heat oven to 375 degrees. Grease a 2 quart glass baking dish.
- In medium mixing bowl, combine hush puppy mix and water; stir until smooth. Add butter, egg yolks, buttermilk, sugar and baking soda; mix well. Fold in egg whites.
- Pour into greased casserole.
- Bake for 50 to 55 minutes or until golden brown and set. Serve warm.
- Store loosely covered in refrigerator.

BAKED HUSH PUPPIES
Here's a healthier alternative to the usual deep-fried hush puppies. I think these look like mini corn muffins, but they taste the way a hush puppy should. Originally from an August 1983 issue of Bon Apetit from "The Cook's Exchange Readers' Best Recipes".

- Preheat oven to 425 degrees.
- Spray cups of mini muffin pans with nonstick vegetable spray.
- Blend cornmeal, flour,baking powder, salt, sugar and red pepper in medium bowl.
- Stir in onion.
- Beat eggs, milk and oil in small bowl.
- Add to cornmeal mixture and stir just until blended.
- Spoon batter into prepared muffin pan, filling cups 1/2 to 2/3 full.
- Bake until golden, about 15 to 20 minutes, or until a toothpick inserted into center comes out clean.
- Serve immediately.
HUSH-PUPPY FRIED CHICKEN

- Mix the flour and cornmeal together in a paper sack. Place each piece of chicken in the sack and shake thoroughly to coat completely.
- Mix the salt, pepper and buttermilk together. Place the hush-puppy mix in another paper sack. Dip each piece of chicken in the seasoned buttermilk and then drop it into the hush-puppy mix and shake to coat thoroughly.
- Heat vegetable oil to 350*F, and drop each piece of cooked chicken into it. Fry until a rich golden brown. Place in a flat baking dish and place in a 325* oven for an additional 30 minutes. Serve at once, piping hot.
- NOTE: If you cannot obtain hush-puppy prepared mix in your store, substitute the following: 2 cups white corn meal, 2 teaspoons baking powder, 1 teaspoon onion powder, 1/4 teaspoon salt, 4 tablespoons butter. Work all together until it is a fine consistency and then use as the breading mixture as specified in the above recipe. Hush-Puppy prepared mix is a timesaving shortcut.
