SHRIMP AND GRITS

Shrimp and Grits image

Creamy grits topped with fresh shrimp, bacon, and mushrooms. Shrimp and Grits is a lowcountry favorite.

Provided by Christin Mahrlig

Categories     Main Dish

Time 55m

Number Of Ingredients 20

2 cups water
2 cups milk
1 teaspoon salt
1 cup stone-ground grits, (I like white grits)
2 tablespoons butter
1/4 teaspoon white pepper
1/2 cup shredded Cheddar cheese
1/4 cup shredded Parmesan cheese
4 slices bacon, (diced)
5 ounces white mushrooms, (sliced)
1/3 cup diced red bell pepper
1 pound shrimp, (peeled and deveined)
2-3 cloves garlic, (minced)
4 green onions, (white and green parts divided, sliced)
1 teaspoon fresh thyme
salt and pepper
1/2 cup chicken broth
1/2 cup heavy cream
1/2 tablespoon lemon juice
1/4-1/2 teaspoon tabasco sauce

Steps:

  • To make grits, bring water, milk, and salt to a boil in a medium saucepan.
  • Gradually whisk in grits so that they do not clump. Turn heat to low and cook according to package directions (probably a good 45 minutes for stone-ground or shorter for quick grits.) Stir frequently to prevent the grits from scorching on the bottom of the pan. If grits are getting too thick, you can add more water.
  • Once done, turn heat off and stir in butter, cheeses, and white pepper. Keep warm.
  • To make shrimp, cook bacon in a large skillet. Remove bacon and set aside. Pour off all but 1 tablespoon of bacon fat.
  • Saute mushrooms and red pepper in the bacon fat for 2-3 minutes. Add shrimp, garlic, white parts of green onion, and thyme. Cook until shrimp are pink. Season with salt and pepper.
  • Add chicken broth, cream, lemon juice, and tabasco. Simmer for 2-3 minutes. Add green parts of green onion and bacon.
  • To serve, scoop grits onto a plate or bowl and top with shrimp mixture.

SPICY SHRIMP AND ANDOUILLE SAUSAGE OVER GRITS

Spicy Shrimp and Andouille Sausage over Grits image

This is a great meal that screams New Orleans! The shrimp and sausage combo can't be beat and the spiciness is kept in check by the creamy grits.

Provided by Kelsey Nixon

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 15

2 1/2 cups low-sodium chicken stock, plus more if needed
2 1/2 cups heavy cream
5 tablespoons unsalted butter
1 cup grits
Kosher salt and cracked black pepper
3 tablespoons olive oil
1 pound smoked Andouille sausage, sliced 1/4-inch thick on an angle
2 cloves garlic, minced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1/2 Spanish onion, small dice
1 pound uncooked large shrimp, peeled and deveined
1 teaspoon Cajun seasoning
Chopped fresh parsley, for garnish
Juice of 1/2 lemon

Steps:

  • For the grits: Bring 2 cups of the chicken stock, the heavy cream and 4 tablespoons of the butter to a simmer in a heavy saucepan. Gradually whisk in the grits. Reduce the heat and simmer until the grits have thickened, 15 to 20 minutes, stirring occasionally to avoid lumps. Once the grits are thick and creamy, adjust the consistency with stock, if necessary, and season with salt and pepper.
  • For the shrimp and sausage: Heat the olive oil in a large skillet. Add the sausage and brown, then transfer to a plate with a slotted spoon, leaving all of the fat in the pan. Add the garlic, bell peppers and onions. Sprinkle with salt and pepper and saute until tender, 5 to 7 minutes. Add the shrimp and Cajun seasoning to the pan and saute until the shrimp are beginning to turn pink, 1 to 2 minutes. Add the reserved sausage and remaining 1/2 cup chicken stock to the skillet and reduce a bit to intensify those flavors. Stir in the remaining tablespoon butter at the end, garnish with parsley, and add the lemon juice.
  • Serve the sausage, peppers and shrimp over the grits.

SPICY SHRIMP AND GRITS WITH TOMATO AND COUNTRY HAM

Spicy Shrimp and Grits With Tomato and Country Ham image

From Slightly North of Broad in Charleston, SC. If the sausage is spicy you may want to leave out the cayenne pepper.

Provided by bengi

Categories     Breakfast

Time 30m

Yield 4 serving(s)

Number Of Ingredients 14

1 1/4 cups stone ground corn grits
4 cups water
1/2 teaspoon salt
1 tablespoon butter
1/4 cup cream
2/3 lb shrimp, 26-35 ct
2 tablespoons butter
4 ounces country ham, julienned
4 ounces smoked pork sausage, cut into rounds
1 teaspoon garlic, finely chopped
1 pinch cajun spices (optional) or 1 pinch cayenne pepper (optional)
1/2 cup fresh tomato, seeded and diced
4 tablespoons green onions, tops only, chopped
1/2 cup chicken stock or 1/2 cup water

Steps:

  • For the grits:.
  • Rinse the grits in a large bowl of water. With your hand, scoop out any bran or hulls floating on top of the water. Drain well.
  • Combine the water, salt and butter in a medium saucepan and bring to a boil. Add the grits and stir. Turn the heat to low and simmer for 28 to 40 minutes (check instruction on the bag of grits), stirring occasionally. If the grits stick to the bottom of the pan, reduce the heat and stir more frequently.
  • Remove from the heat and stir in the cream. Keep warm.
  • For the shrimp:.
  • While the grits are cooking, peel and devein the shrimp. If desired, swish the shrimp in a bowl of cool, salted water to remove any impurities. Repeat. Finish with a cool water rinse, drain and set aside.
  • When the grits are ready, prepare the topping. In a large skillet, sauté the shrimp in a tablespoon of butter over medium heat for 1 to 2 minutes, until they are just cooked through. Remove and set aside.
  • In the same skillet, sauté the country ham and sausage for 1 to 2 minutes, or until the sausage is cooked through.
  • Add the garlic and cayenne, if using, and sauté 30 seconds. Add the tomatoes and green onions and sauté 30 seconds.
  • Return the shrimp to the skillet, add water or chicken broth and simmer briefly. Stir in the remaining tablespoon of butter.
  • To serve, spoon four equal portions of the grits into four bowls. Place 5 or 6 shrimp on top of each portion of grits and spoon on equal parts of the topping, including some of the liquid. Serve at once.
