WILTED ICEBERG LETTUCE
MY Father's Mother made this a grandchildren's favorite, a dish she brought with her from Czechoslovakia. This hot salad is a good choice to accompany a hearty meat entrée, such as roasts, chops or steaks.

Steps:
- Place lettuce in a large salad bowl; set aside. In a small skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 2 tablespoons drippings. , Saute onion in drippings over medium heat until tender. Stir in flour until blended; cook and stir until lightly browned. Combine the water, vinegar, sugar, salt and pepper; gradually stir into onion mixture. Bring to a boil, stirring constantly; cook and stir 1 minute longer or until thickened. , Pour hot dressing over lettuce; toss to coat. Top with bacon and serve immediately.

ICEBERG LETTUCE WITH BLUE CHEESE DRESSING
This recipe reminds me of childhood. It's extremely retro, with an optional update. Definitely not for the nutrition-conscious. Did you know iceberg lettuce has the poorest nutritional content of all lettuces? The lettuce certainly won't boost your vitamin A or C levels, or fatten you up but the dressing sure will! This was in today's NY Times, an article about "loser lettuces" (iceberg and romaine) by Mark Bittman, the Minimalist. I would take exception with calling romaine a loser lettuce; unlike iceberg it has lots of nutrition. Then again, sometimes you just can't beat the crunchy cold of iceberg. I made this last night and it was just as I remembered it :)

- Sprinkle salt over garlic and mash together to make a paste, the finer the better. Combine the paste with all ingredients except lettuce. Taste and adjust the seasoning, if needed. Chill for several hours before serving. When ready to serve, thin with more buttermilk if needed.
- Wash and dry the lettuce. Cut into wedges.
- To serve: place wedges on a platter or salad plates and drizzle dressing over wedges, making sure you have enough for all the lettuce leaves.
