PERFECT SEVEN-MINUTE FROSTING

Perfect Seven-Minute Frosting image

Categories     Food & Cooking     Dessert & Treats Recipes

Yield Makes about 1 quart

Number Of Ingredients 3

3/4 cup plus 2 tablespoons sugar
1 tablespoon light corn syrup
3 large egg whites, room temperature

Steps:

  • In a small, heavy-bottom saucepan, combine 3/4 cup sugar, corn syrup, and 4 tablespoons water. Place over medium heat, stirring occasionally, until sugar has dissolved, about 4 minutes. Rub a bit of the mixture between your fingers, making sure any graininess has disappeared. Raise heat, and bring to a boil without stirring. Continue boiling, occasionally washing down the sides of the pan with a pastry brush dipped in cold water to prevent sugar from crystallizing, until a candy thermometer registers 230 degrees, about 5 minutes. (Depending on the humidity, this can take anywhere from 4 to 10 minutes.) Remove the syrup from heat (temperature will keep rising).
  • Meanwhile, in the bowl of an electric mixer, whisk the egg whites on medium speed until soft peaks form, about 2 1/2 minutes. Gradually add remaining 2 tablespoons sugar. With mixer on medium-low speed, pour syrup in a steady stream down side of bowl (to avoid splattering).
  • Beat the frosting on high speed until cool, about seven minutes. It should be thick and shiny. Use immediately.

GLOSSY ROYAL ICING

Glossy Royal Icing image

I received this recipe from a professional baker. I prefer to use this instead of a regular royal icing recipe with egg whites. It hardens nicely and is glossy rather than matte like regular royal icing. Use almond, orange, or lemon extract, whatever you prefer.

SUGAR COOKIE ICING WITHOUT CORN SYRUP (4 RECIPES) - DESIGN ...

From designeatrepeat.com
  • Powdered Sugar Icing for Cookies. Besides my original sugar cookie icing recipes (that uses corn syrup), powdered sugar icing is probably on the same level of easy.
  • Royal Icing for Sugar Cookies. Traditional royal icing doesn’t use corn syrup, but rather uses meringue powder to help it harden. Because of this, royal icing is best when you want your cookies to be able to be stacked or when you need to pipe intricate details that you want to hold their shape.
  • Cream Cheese Frosting for Cookies. If you’re looking for something more creamy than traditional icings (that doesn’t require fancy decorating), I recommend frosting the cookies with cream cheese frosting.
  • Pipeable Sugar Cookie Buttercream Frosting. Looking for something a little fancy without going all out on intricate designs? My pipeable sugar cookie buttercream frosting is the perfect addition to soft and thick sugar cookies.
