Indian Bombay Potatoes and Peas image

Indian Bombay Potatoes and Peas is a comforting, one-pot dish with tender potatoes, peas, turmeric, coriander, garam masala, and cayenne.

2 pounds baby yukon potatoes (, halved)
4 tablespoons unsalted butter (, or ghee)
2 teaspoons yellow mustard seeds
2 teaspoons cumin seeds
2 teaspoons ground turmeric
1 tablespoon ground coriander
1 tablespoon garam masala
1/2 teaspoon cayenne pepper
2 teaspoons kosher salt
4 cloves garlic (, minced)
1 tablespoon ginger (, minced (or paste))
16 ounces green peas (, thawed)

Steps:

  • Add halved potatoes to a large pot of water.
  • Bring to a boil and cook for12 minutes or until fork-tender.
  • Drain water, set potatoes aside.
  • Add butter, mustard seeds, cumin seeds, turmeric, coriander, garam masala, cayenne, and salt, stirring well, over medium heat until spices have slightly darkened in color (but not burnt).
  • Add in the garlic and ginger and stir well.
  • Stir in cooked potatoes and thawed peas.
  • Garnish with cilantro if desired.

A yummy Indian side dish, Bombay potatoes are vegan, super simple to make, and family friendly to boot. I have lived in both India and the UK, where this is a popular dish, and this is the one Indian dish that I make that tastes super authentic.

4 potatoes, peeled and cubed
3 tablespoons vegetable oil
1 teaspoon yellow mustard seeds
1 teaspoon cumin seeds
1 teaspoon ground turmeric
1 teaspoon ground coriander
½ teaspoon cayenne pepper, or to taste
½ teaspoon salt, or to taste
3 tablespoons minced onion

Steps:

  • Place cubed potatoes in a saucepan and cover with water. Cover with a lid and bring to a boil over medium-high heat. Once water is boiling, cook until potatoes are just tender, 5 to 10 minutes. Drain well and set aside.
  • Heat oil in a large skillet over medium heat. Add mustard seeds and cumin seeds and heat until they start to pop. Add turmeric, coriander, cayenne pepper, and salt. Cook and stir until spices are fragrant, up to 1 minute, watching carefully so spices do not burn. Add onion and cook until softened, 2 to 3 minutes.
  • Add drained potatoes to the skillet and increase heat to medium-high. Cook and stir to thoroughly coat the potatoes with the spice mixture. Taste and season with more salt, if desired. Serve immediately.

  • Heat the oil in a large skillet over medium heat. Add the cumin and mustard seeds. Cook until the cumin seeds change color, 1 to 2 minutes. Add the onion and cook until it is translucent, 5 to 6 minutes.
  • Meanwhile, in a blender, blend the tomato, garlic, and ginger into a coarse puree. Add the tomato mixture, turmeric, cayenne, coriander, ground cumin, and garam masala to the skillet. Cook, stirring occasionally, until the puree thickens and the garlic is fragrant, 5 to 6 minutes.
  • Add the potatoes, salt, and water. Cover the skillet and cook for 10 to 11 minutes. Add the peas. Taste and adjust the seasonings. Reduce the heat to medium-low. Simmer for another 10 to 12 minutes, or until the potatoes are cooked to your preference. Add additional water if the potatoes start to stick or if you prefer more curry. Add the cilantro and lemon juice (if using).
