Easy Bombay Potatoes image

Easy Bombay Potatoes AKA Bombay Aloo - the best ever Indian Spiced Roasties. The perfect partner for any curry recipe or to spice up your Sunday Roast !

8 to 10 medium potatoes, peeled & cut into small chunks (I used Maris Piper)
½ tsp sea salt
1 tsp turmeric
2 to 4 tbsp rapeseed oil or vegetable oil
1 onion, diced
2 tsp black mustard seeds
2 tsp curry powder or paste or garam masala (I used Pataks Madras paste)

Steps:

  • Preheat your oven to 200°C / Gas Mark 6 / 390°F
  • Place the potatoes in a large saucepan and cover with water.
  • Add salt and turmeric before bringing your potatoes to the boil and then simmer gently for 5 minutes.
  • Drain your potatoes and toss them with the remaining ingredients. Make sure all the potatoes are well coated.
  • Place onto a large roasting pan and pop in the oven for 30 to 40 minutes until nice and crispy. Turning halfway through cooking time.

800g potato , peeled and cut into small cubes
2 tbsp olive oil
1 tsp mustard seed
1 tsp turmeric
2 tsp garam masala
140g frozen pea

Steps:

  • Cover the potatoes in cold salted water, then bring to the boil. Simmer for 5 mins, until just tender. Drain and allow to steam dry for a few mins. Heat the oil in a frying pan and fry the spices for 1 min until fragrant. Tip in the potatoes and toss well so they are coated in the spices. Gently fry for 5-10 mins until slightly golden, then add peas, mix well and cook for 3-4 mins more. Season well before serving.

Cook 1/2 chopped red onion in 3 tablespoons vegetable oil in a large nonstick skillet over medium heat, stirring, until tender, about 5 minutes. Stir in 1 teaspoon curry powder, 30 seconds. 1 lb Potatoes diced (4 to 5 large)
1 tbsp Ginger (grated)
1 tbsp Garlic (minced)
2 tbsp Cooking oil (canola/peanut)
1 tbsp Black mustard seed
2 tbsp Lemon juice
2 tsp Salt (or more to taste)
1 tsp Pepper
1/2 cup Cilantro leaves (chopped)
5 Curry leaves (optional)
1/2 tsp Chili powder / cayenne (up to 1 tsp)
1 tbsp Coriander powder
1/2 tbsp Cumin powder
1 tsp Turmeric powder

Steps:

  • Wash, peel and dice the potatoes into equal size pieces about 1 1/2 inch.Pro tip - Don't dice the potatoes too small as they absorb too much moisture.
  • Boil the potatoes in a large pot of cold salted water. Bring to a boil and cook for 10 to 12 minutes until fork tender. Drain the potatoes in a colander and set asidePro tip - Always cook potatoes in cold not hot water. That way they do not become soggy.
  • Have all your sauté ingredients ready as this take no more than 3 to 5 minutes and you don't want to burn anything.
  • In a large sauté pan or frying pan. Heat the oil on medium high heat. When hot add the mustard seeds and let them crackle for a few seconds. Then add the curry leaves Pro tip - mustard seeds will crackle only when the oil is very hot (like popcorn). The curry leaves add a nice aroma but can be omitted.
  • Next, lower the heat to medium low, Then, add the ginger and garlic, sauté another 30 seconds. Followed by the spices and water. Cook for another 30 seconds until fragrant. Pro tip - the water will prevent the spices from burning. If necessary add 2 tbsp more.
  • Then add the potatoes. Toss them gently to coat with all the spices. Cook for a minute on medium-low tossing so it's all well coated. Pro tip- use a flat spatula and toss the potatoes around in the pan, this way you won't mash the potatoes.
  • Finally, give it a generous squeeze of lemon juice and cilantro. Taste and adjust seasoning.
  • Garnish with more chopped cilantro before serving.

6 large potatoes or about 8 to 10 smaller potatoes (peeled and cut into wedges)
1 tablespoon olive oil (plus extra for brushing parchment paper)
1/2 tablespoon ginger and garlic paste
1 teaspoon turmeric
1/4 teaspoon cayenne pepper
1 teaspoon garam masala
1 teaspoon dry basil
1 teaspoon dry oregano
salt and pepper to taste

Steps:

  • Preheat oven to 425 F degrees.
  • Line baking tray with aluminum foil and parchment paper, or just parchment paper, but make sure it covers the entire tray.
  • Brush olive oil over the parchment paper.
  • In a small bowl combine the rest of the ingredients and slightly whisk. Pour this mixture over the potatoes and toss them around to make sure each wedge is fully coated in the spice.
  • Place the potatoes on the baking sheet and bake on the middle rack for 15 minutes. Take the tray out and turn wedges over and bake for another 10 or 15 minutes or until potatoes are done.

I got this recipe from manjulaskitchen.com. It was so delicious we just ate it without any bread or accompaniment. I didn't even have time to take a picture because it was all gone! Maybe next time. The actual recipe states to boil the potatoes first, but I just added them to the pan and let them cook in the pan with the other ingredients. I don't know if the version below is exactly the same as from the website, but it's how I made it.

2 -3 potatoes, small cubes
1/2 teaspoon cumin seed
1/4 teaspoon caraway seeds (kalonji) or 1/4 teaspoon onion seeds (kalonji)
1/4 teaspoon mustard seeds
1 pinch asafoetida powder
2 tablespoons olive oil
1/2 teaspoon turmeric powder
1/2 teaspoon salt
1 chopped green chili pepper (I used Serrano pepper)
2 tablespoons chopped cilantro
1 tablespoon lemon juice

Steps:

  • 1) Peel and cut potatoes into small cubes.
  • 2) Heat oil in pan.
  • 3) Add cumin seeds, onion seeds, mustard seeds and asafoetida powder to pan and shake around until seeds start to crackle.
  • 4) Add potatoes, turmeric powder, salt and green chilis. Mix well.
  • 5) Lower heat to simmer and cover pan for about 18-20 minutes or until the potatoes are fork tender. You may want to add a splash of water at this step if it's too dry for the potatoes to get cooked well.
  • 6) Increase heat to high and stir. I let the potatoes brown a bit but you can skip this step.
  • 7) Remove from heat and stir in chopped cilantro and lemon juice.

2 tablespoons vegetable oil
1 lb potato, peeled and cubed
1 onion, chopped
1 clove garlic, finely chopped (or more)
1 chopped green chili peppers or 1 red chili pepper (optional)
1 teaspoon cumin seed
1/2 teaspoon turmeric
1/2 teaspoon ground coriander
1/2 teaspoon garam masala
1/2 teaspoon salt
2 cloves
2 cardamom pods
2 bay leaves
1 inch cinnamon stick
5 tablespoons natural yoghurt
3 tomatoes, chopped
3 tablespoons chopped fresh coriander or 3 tablespoons parsley

Steps:

  • Heat the oil in a large saucepan, add the potatoes, onion, garlic and shallow fry them over a medium heat for 10 minutes, stirring from time to time, until softened and golden brown.
  • Add the cumin seeds, turmeric, ground coriander, garam malasa, salt, cloves, cardamoms, bay leaves, cinnamon stick, chopped chili and cook, stirring for about 5 minutes.
  • Add the tomatoes and yoghurt, cover and cook very gently for 5 minutes or until the potatoes are cooked, adding a little water if necessary.
  • Serve hot with the coriander sprinkled on top.

2 large potatoes-peeled & cut into wedges
2tbsp vegetable oil
1tsp black onion seeds
1tsp black mustard seeds
1tsp cumin seeds
1 small chilli-seeded & finely shredded-(optional)
1cm piece of root ginger-grated
1tsp sugar

Steps:

  • Preheat oven to 200c/fan 160c/gas 6
  • Bring the potatoes to the boil, simmer for 6mins & drain well.
  • While the potatoes are boiling, heat the oil in a small pan over a medium heat, add the onion, mustard & cumin seeds & fry till popping.
  • Take the pan off the heat, add the rest of the ingredients, stir & pour this over the drained potatoes. Stir very gently until all the wedges are coated in the seeded oil
  • Place the wedges onto a baking tray well spaced apart & cook uncovered for 35mins, then turn & cook for a further 30mins or until golden & crispy

2 pounds small red potatoes (halved)
1 teaspoon mustard seeds
1/2 teaspoon red chili flakes
2 teaspoon fresh ginger (minced)
5 garlic cloves (minced)
1/2 jalapeno (seeded and minced)
1 teaspoon salt
1 teaspoon ground turmeric
1/2 teaspoon garam masala
1/2 cup fresh cilantro (chopped)
1/2 cup mint (chopped)
1 tablespoon fresh lime juice
6 lime wedges

Steps:

  • Preheat oven to 400 F degrees. Coat a large baking dish, that's at least 9x13 inches with the cooking spray.
  • Combine 1 tbsp of the olive oil with the potatoes and toss to coat; set aside.
  • Heat remaining 1 tbsp olive oil, mustard seeds, chili pepper seeds in a small skillet over medium-high heat; cook about a minute until seeds begin to pop. Reduce heat to medium-low. Add ginger, garlic and jalapeno to skillet; cook about 1 minute, stirring constantly. Add in the salt, turmeric, garam masala and cook for another minute, stirring occasionally.
  • Pour spice mixture over the potatoes and toss to coat. Arrange potatoes in a single layer in the prepared baking dish.
  • Bake for 40 minutes or until potatoes are tender and browned. Stir in chopped cilantro and mint. Drizzle with lime juice.
  • Serve with lime wedges.
