MACHE WITH WARM BRIE AND APPLES

1 French baguette, sliced 1/2 inch thick diagonally
12 ounces good French Brie, cut into 4 wedges
6 tablespoons honey
3 tablespoons roasted and salted pistachios
4 ounces mache leaves (8 to 10 ounces with roots attached)
1 tablespoon syrupy aged balsamic vinegar
3 tablespoons good olive oil
Kosher salt and freshly ground black pepper
1 large Granny Smith apple, cored and thinly sliced

Steps:

  • Preheat the oven to 350 degrees. Place the sliced bread on a sheet pan and bake for 6 to 8 minutes, until crisp.
  • Arrange the 4 wedges of Brie snugly in one layer in a glass or ceramic baking dish. Drizzle the honey over the wedges and then scatter the pistachios over the top. Bake for 3 to 5 minutes (depending on the ripeness of the Brie) until the Brie just begins to ooze but isn't melted. Be careful-it happens fast!
  • Place the mache in a large bowl and toss it gently with the balsamic vinegar and olive oil. Sprinkle with salt and pepper. Divide the salad among 4 large salad plates and place a piece of the warm Brie with the pistachios in the center of each plate. Place a quarter of the apple slices on each plate fanned out on one side of the Brie. Place 2 or 3 slices of toasted baguette on the other side of the Brie and sprinkle generously with salt and pepper. Drizzle with the honey still in the baking dish and serve immediately.

1 large red or brown skinned pear, slightly underripe
A wedge lemon
1 pound individual wheel brie cheese
24 sesame Melba toast rounds, any brand

Steps:

  • Quarter apple and pear lengthwise and cut into each quarter on an angle to remove the core. Slice apple and pear into 1/4-inch thick slices. Squeeze a little lemon juice over the fruit to slow browning.
  • Cut the top rind off the brie and place in the microwave on high for 60 seconds. Depending on the ripeness of the cheese, it will take 60 to 90 seconds on high to heat and melt. If brie is not yet soft and hot after 1 minute, place it back in microwave for another 30 seconds on high.
  • Serve the softened, warm brie with a platter of fruit and Melba toasts for dipping and spreading. Reheat brie if it tightens up for 20 to 30 seconds at a time on high.

3 Fuji apples - peeled, cored, and diced small
½ pound Brie cheese, cut into very small pieces
20 vanilla wafers, crushed
1 tablespoon honey
1 teaspoon vanilla extract
1 egg
1 ¼ cups all-purpose flour, or more as needed
¾ cup milk
½ cup confectioners' sugar
½ teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
oil for frying
20 vanilla wafers, crushed, or more as needed

Steps:

  • Stir apples, Brie cheese, 20 crushed vanilla wafers, honey, and vanilla extract together in a bowl. Cover the bowl with plastic wrap and refrigerate until cold, at least 15 minutes.
  • Beat egg until frothy in a large bowl with an electric mixer. Gradually add flour, milk, confectioners' sugar, baking powder, cinnamon, and salt; beat until batter is thick and smooth, adding more flour as necessary to reach desired consistency.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Pour 20 crushed vanilla wafers into a shallow bowl.
  • Roll apple mixture into small balls. Drop balls into funnel cake batter and turn to coat completely. Roll coated balls in crushed vanilla wafers. Place the coated apple balls onto a plate while coating the rest; do not stack.
  • Working in batches, fry apple-brie bites in hot oil until golden brown, 3 to 5 minutes. Transfer cooked apple-brie bites to a paper-towel lined plate to drain and cool.

1 teaspoon salt
8 cups bite-size pieces frisée leaves (about 2 large heads)
4 cups bite-size pieces dandelion greens, tough center ribs and stems discarded
1 cup fresh Italian parsley leaves
3 tablespoons Sherry wine vinegar
12 ounces thick slices applewood-smoked bacon, cut into 1/2-inch pieces
1/4 cup sliced shallots

Steps:

  • Preheat oven to 400°F. Toss potatoes with 2 tablespoons olive oil, thyme, and 1 teaspoon salt in medium bowl. Arrange potatoes in roasting pan; cover pan with foil. Roast until tender when pierced with fork, about 40 minutes. Cool 10 minutes. Cut potatoes in half lengthwise.
  • Meanwhile, toss frisée, dandelion leaves, and parsley in large bowl. Whisk vinegar and remaining 2 tablespoons olive oil in small bowl to blend.
  • Sauté bacon in heavy large skillet over medium-high heat until golden brown, about 5 minutes. Reduce heat to medium; add shallots and potatoes to skillet and sauté 2 minutes. Add vinegar mixture and swirl pan until heated through. Season to taste with salt and pepper. Pour bacon mixture over greens; toss to coat and serve.

2 teaspoons sugar
15 ounces round brie cheese
1 tablespoon fresh chives, chopped

Steps:

  • Melt butter until sizzling in small skillet; stir in sugar.
  • Add pecans and cook over medium heat, stirring occasionally, until sugar is caramelized (4-5 minutes). Set aside.
  • Unwrap brie; place on microwave safe serving plate.
  • Cut circle in top of cheese with sharp knife about 1/2 inch from edge and 1/4 inch deep.
  • Microwave cheese on HIGH until top piece of cheese can be easily lifted off (45-60 seconds).
  • Discard top.
  • Sprinkle cheese with caramelized pecans and chives.
  • Microwave on HIGH until cheese is creamy and begins to bubble, 45-75 seconds.
  • To serve, arrange greens on serving place and top with cheese.
  • Serve with assorted fruit.

Steps:

  • Sorry to be so non-specific.
  • I just had this sandwich in a restaurant and posted a thread talking about it- several people asked me to post it as a recipe, so I'm kind of guessing here.
  • Split the baguette for a sandwich.
  • Slice the brie into medium thick slices and place a layer on each side of the open baguette.
  • Place in a 350 oven for a few minutes to warm the brie.
  • Top with apple slices, a little chutney or preserves and sprinkle toasted walnuts over.

Sweet-tart pickled cherries are a wonderful -and unexpected-addition to any summer salad, while their acid-spiked pickling liquid makes for a stunning vinaigrette.

¾ pound sweet cherries, stemmed and pitted
1 sprig fresh tarragon
3 tablespoons balsamic vinegar
2 tablespoons red-wine vinegar
¼ cup sugar
12 black peppercorns
¼ cup olive oil
Salt and freshly ground black pepper
6 cups torn frisée
4 ounces Brie or other creamy French cheese, cut into slices or bite-size pieces
½ cup shelled pistachios.

Steps:

  • Put the cherries and tarragon in a glass jar. Put the vinegars, sugar, peppercorns, and ½ cup water in a small saucepan over high heat. Bring the mixture just to a boil so that the sugar dissolves, then turn off the heat, and let it cool slightly. Pour it over the cherries (it's fine if they're not completely submerged), and cool completely before capping and refrigerating. The cherries will be ready in a week and will last for a month.
  • Drain the cherries (reserving the liquid), and slice them in half. Whisk together the olive oil, 2 tablespoons of the cherry liquid, salt and pepper in a small bowl; drizzle it over the frisée. Scatter the cherries, Brie and pistachios over the frisée, and serve.
