CHICKEN WINGS WITH SPICY APRICOT SAUCE
Everyone gobbles these up at Christmas potlucks! My mother gave me the recipe for this anytime appetizer with its flavorful sweet-and-sour sauce.

- Cut chicken wings into three sections; discard wing tip section. In a shallow bowl or large resealable plastic bag, combine cornstarch, baking powder, salt, pepper and sugar. Dip chicken pieces in eggs, then coat generously with cornstarch mixture., In an electric skillet or deep-fat fryer, heat oil to 350°. Fry chicken wings, a few at a time, for about 9 minutes or until juices run clear. Drain on paper towels. Keep warm. , Meanwhile, in a large saucepan, combine apricots and water; bring to a boil. Reduce heat; cover and simmer until apricots are tender. , Transfer to a blender or food processor. Add the sugar, vinegar, honey and cayenne; process on high until smooth. Cool slightly. Serve with chicken wings.

Steps:
- Wash the chicken wings and dry as much as possible.
- Preheat oven at 400 degrees.
- Place chicken in a deep baking dish.
- Mix all other ingredients together in a bowl.
- Pour over chicken.
- Place in oven or 1 1/2 hours or until chicken is done and sauce is sticky.
- IMPORTANT: Due to the hot cooked sugar, chicken will be extra hot and easy to burn.
- be careful and let chicken sit for at least 15-20 minutes before serving.
LIME, APRICOT, AND SOY-SAUCE CHICKEN WINGS
Steps:
- Preheat oven to 425°F. Cut off wing tips, reserving for another use, and halve wings at joint. Divide wings between 2 large roasting pans, arranging in single layers.
- Purée remaining ingredients in a blender and pour mixture over wings, dividing evenly between pans. Bake wings in upper and lower thirds of oven 50 minutes. Turn wings over and switch position of pans in oven, then bake 45 minutes to 1 hour more, or until liquid is thick and sticky.
- Serve wings warm or at room temperature.
LIME APRICOT SOY WINGS
The lime is a refreshing change - with a garlic kick! From Gourmet magazine December 1999. I have made this many times and had great response to it. People who don't like the Buffalo wings enjoy these, and the spice loving wing fans just ask for more!

- Preheat the oven to 425ºF. Divide the chicken wings between the two large foil pans, spreading them out into a single layer.
- Put all of the sauce ingredients, except the red pepper flakes, into a blender and puree. Divide the sauce, pouring half into each pan. Toss to coat. Sprinkle red pepper flakes evenly over chicken, 1 1/2 teaspoons per pan. Toss to combine.
- Cook the chicken in the upper and lower shelves of the oven for 50 minutes. Switch the position of the pans and flip wings over. Cook for another 30-45 minutes, checking often to prevent burning, until the wings are darkened and the sauce is thick and sticky. Mound wings onto a platter and sprinkle with scallions. Sliced, lightly salted cucumbers make a good accompaniment. Enjoy!
