- Mix together the cornflour and 250ml water to form a smooth paste (whisk vigourously to make the batter smooth).
- Mix the 1.5 lt water with the sugar in a large pot until the sugar dissolves then add the cardamom powder and gradually stir-in the cornflour mixture and the ghee. Mix thoroughly until everything combines.
- Heat on medium heat, stirring continuously with a wooden spoon for the first 20 minutes. After that go back every 10 minutes or so to stir.
- Keep cooking for about 3 hours, until the mixture thickens and the ghee separates out. Pour the ghee from the pan, put the xalwa (also known as halwa) in a separate pan and decorate with peanuts and sesame seeds.
- When cooled slice with a wet knife. Wrap in cellophane or waxed paper.

- Heat ghee in a thick-bottomed pan.
- Add the ground almonds.
- Stir until they become lightly browned.
- Add the condensed milk.
- Stir until it thickens and starts leaving the sides of the pan.
- Remove onto a lightly greased serving tray.
- Garnish with almonds and serve.
- Enjoy!

- Firstly, take a bowl and pour warm water in it. Add almonds into the bowl and soak the almonds overnight. Then, peel the almonds and chop them. Also, crush green cardamoms with a pestle and mortar.
- To prepare the sugar-saffron syrup, place a saucepan over medium flame and pour water in it. Then add sugar, crushed cardamoms and saffron into the pan. Stir it continuously for 5-7 minutes and keep it aside.
- On the other hand, place a frying pan over medium flame and pour ghee in it. When the ghee is melted, add suji in it and stir continuously until it is golden brown in colour.
- While stirring continuously, mix the sugar-saffron syrup in the suji mixture. Simmer and cook the mixture for 10-15 minutes. Garnish the shahi halwa with chopped nuts and rose petals. Serve immediately.
