INSTANT POT® PORK LOIN AND WHITE BEANS
You will have tender, tasty pork loin in under an hour with this easy recipe using canned beans, salsa, and beer.

Steps:
- Season pork loin with salt and pepper. Mix chili powder, cumin, and onion powder together; sprinkle on all sides of the pork.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil until hot. Cut pork loin in half to fit in the pot if necessary. Cook until browned on each side, about 5 minutes total. Remove and set aside.
- Pour beer into the pot and stir to deglaze, scraping up all the browned bits. Return pork loin to the pot. Place bay leaves on top. Pour cannellini beans, then salsa, on top. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 15 to 20 minutes. Unlock and remove the lid. Slice pork, cut into chunks, or shred. Serve with the beans.

Steps:
- First, add onions, carrots, garlic and olive oil to the Instant Pot and put on saute function on for 5 minutes.
- Then, when sauteing is done, cut Hatfield Tuscan Herb Dry Rub Seasoned Pork Tenderloin into three equal pieces and place into Instant Pot.
- Next, place the remaining ingredients in the Instant Pot.
- Then, put the Instant Pot lid on and set to high pressure for 25 minutes. When the timer goes off, let it naturally release for about 5 minutes. Then, carefully vent the the remaining pressure. When the metal indicator goes down, carefully open the lid.
- Using a fork, pull apart the Hatfield pork tenderloin pieces. Add salt and pepper if needed.

- Combine navy, kidney, and black beans in a multi-functional electric pressure cooker (such as Instant Pot®) with 6 cups water. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 27 minutes. Allow 10 to 15 minutes for pressure to build.
- In the meantime, heat olive oil in a large stockpot over medium-high heat. Saute onion, carrots, and celery until onion is translucent, about 5 minutes. Add garlic and saute until fragrant, about 1 minute. Add flour and stir until well coated. Pour in stock and water. Add kielbasa, salt, pepper, parsley, basil, thyme, and bay leaf. Bring to a boil; reduce heat and simmer for 10 minutes.
- Release pressure on the beans using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Drain.
- Bring stew back to a boil. Add the beans and orzo. Boil until orzo is soft and flavors come together, about 9 minutes. Remove from heat and let cool slightly before serving.

HERBED WHITE BEAN AND SAUSAGE STEW
Here's a meaty, cold-weather stew laden with white beans, sweet Italian sausage, rosemary, thyme, cumin and garlic. It is deeply flavored and complex, but quite easy to make. Pan-fry the sausages in a bit of olive oil, then sauté the vegetables with cumin and tomato paste in the drippings. Add plenty of water and the dried beans that, wait for it, you did not have to soak. Simmer until the house is fragrant and the windows fog up (about 2 hours).

- Heat oil in a large stockpot over medium-high. Add the sausage and brown until cooked through, about 7 minutes. Using a slotted spoon, transfer to a plate lined with a paper towel.
- Add the tomato paste and cumin to the pot. Cook, stirring, until dark golden, about 2 minutes. Add the carrots, celery, onion and garlic. Cook, stirring, until the vegetables have softened, about 5 minutes. Stir in the beans, 8 cups water, salt, thyme, rosemary and bay leaf. Turn the heat up to high and bring to a boil. Then reduce heat to low and simmer gently until the beans are tender, about 2 hours, adding more water if needed to make sure the beans remain submerged.
- When beans are tender, return the sausage to the pot. Simmer for 5 minutes. Stir in the vinegar and pepper. Taste and adjust seasoning. Ladle into warm bowls and serve drizzled with more vinegar and olive oil.

- Prepare all the ingredients and turn on the Instant Pot. Press the Sauté function key and let the pot to heat up slightly. Add the olive oil, onion, celery and carrot with 1 teaspoon of salt and cook for 5 minutes, stirring a few times.
- Add the pork and diced bacon and cook together with the vegetables for about for 2-3 minutes, stirring through and breaking the meat apart with a spatula. Then, add the rest of the ingredients, except for fresh parsley and lemon juice, and stir through. Press Cancel/Keep Warm to stop the Sauté function.
- Place and lock the lid, making sure the steam valve is set to Sealing. Press Manual function, HIGH pressure and adjust the time to 6 minutes. After 3 beeps, the Instant Pot will start to build up the pressure, which will take about 5-7 minutes, and the cooking will begin. Once the timer goes off, allow 10 minutes for natural pressure release; then, use a quick pressure release method by carefully moving the valve to Venting.
- To finish the stew, stir in the lemon juice and parsley and serve with grated cheese on the side (if you wish).
