The Works Pizza Bread image

The deep hollow created by emptying the bread is filled with lots of goodies, and this becomes a deep-dish pizza.

Yield Serves 2 to 4

Number Of Ingredients 7

1 18 x 4-inch 1-pound French bread
12 ounces sweet Italian sausage, casings removed
1 10-ounce package frozen chopped spinach, thawed, squeezed very dry
1/2 cup plus 2 tablespoons purchased pesto sauce
1/2 pound mozzarella cheese, coarsely grated
3 4 3/4-ounce cans eggplant appetizer (caponata)
3/4 cup purchased marinara sauce or pizza sauce

Steps:

  • Position rack in center of oven and preheat to 375°F. Horizontally, cut off top 1/3 of bread and reserve for another use. Scoop or cut out interior of bread, leaving 1/2-inch shell. Place shell on large baking sheet.
  • Fry sausage in heavy medium skillet over medium-high heat until cooked through, breaking up with fork, about 10 minutes. Drain all fat from skillet. Combine spinach and 1/2 cup pesto in small bowl. Sprinkle half of cheese over bottom of bread shell. Spread spinach mixture over cheese. Arrange sausage evenly over spinach layer. Spread eggplant appetizer over.
  • Bake pizza until filling is heated through, about 20 minutes. Combine marinara sauce with remaining cheese and spread over top of pizza. Dot with remaining 2 tablespoons pesto. Bake until cheese melts and topping bubbles, about 12 minutes.

2 teaspoons yellow cornmeal
1 tube (12 ounces) refrigerated biscuits
1/2 cup pizza sauce
3/4 cup shredded mozzarella cheese

Steps:

  • Sprinkle cornmeal on bottom of a greased 8-in. square baking pan. Cut each biscuit into quarters; toss with pizza sauce. Place in dish; sprinkle with cheese. Bake at 400° for 14 minutes or until golden brown.

1 1/3 cups water (Or 1 Cup Water and 1/3 Cup Flat Beer for better flavor)
2 tablespoons olive oil
1 teaspoon sugar
1 teaspoon honey
1 1/4 teaspoons salt
2 tablespoons cornmeal
3 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon italian seasoning
1 1/2 teaspoons yeast

Steps:

  • Add ingredients to machine in the order listed.
  • Set to "Dough" mode and let the machine run through its cycle.
  • Once completed, place in greased pan to rise about 20-30 min, and split in half.
  • If you aren't going to use the dough right away, fear not. Simply divide the dough and place in ziplock bags, then stack flat to be used as needed.
  • When the special day arrives, slap it on a cornmeal/floured surface, and roll flat, If you're fortunate enough to have a wife who doesn't mind you twirling it in her kitchen (like me -- as long as I clean up my own messes) -- have fun with it before going for the big-bake!
  • Add light layer of sauce and pre-bake your crust at 400 degrees for 5-7 minutes.
  • Believe me--you'll want to follow this step (thank me later).
  • Remove from oven and add toppings of your choice.
  • Bake in oven at 400F degrees until done(approx 20 minutes, depending upon topping thickness).
