- Add kidney beans and water (or vegetable broth) to the Instant Pot and stir to prevent sticking. Pressure cook on high for 40-45 minutes (40 minutes for more firm, 45 for more tender // it will take about 8 minutes for the Instant Pot to pressurize before cooking begins).
- Once the timer goes off, allow to naturally release for 15 minutes, then release any remaining pressure. Carefully remove lid once steam has fully escaped and strain off any excess cooking liquid.
- Enjoy immediately in stews, soups, chili, pasta, salads, or alongside steamed or sautéed greens. Store cooled leftovers in the refrigerator up to 5 days or in the freezer up to 1 month. Reheat in a saucepan on the stovetop, adding a little water, as needed, to prevent sticking.

- Place all ingredients for the onion masala into the inner liner of the Instant Pot.
- Place a trivet on top of this masala.
- In a heat-safe bowl, place the red kidney beans and 2 cups of water. Cover the bowl with foil.
- Place the covered bowl on top of the trivet. Seal the Instant Pot.
- Press the BEAN button to cook for 30 minutes and let it naturally release pressure for 10 minutes.
- Open the Instant Pot and remove the red kidney beans and the trivet. Slightly mash about half the rajma with the back of your spoon.
- Turn the pot onto SAUTÉ (high). Pour the rajma and any remaining water in with the onion masala and mix well. Let the contents come to a boil to meld all the flavors well.
- Serve with rice.

- Clean beans from impurities like small rocks. Soak them overnight if possible.
- Chop onion and bell peppers. Clean and chop the parsley too.
- Start sauteing onions and minced garlic in olive oil. Once onions become translucent add bell peppers. Lower heat to medium.
- While bell peppers are sauteing, peel carrots and slice them. You can also buy carrots already sliced.
- Add carrots to pot, stir and saute some more. Add the beans.
- Mix everything well, add tomato paste and chopped parsley. Add salt & water. Also at this point add chili powder and paprika. Stir one more time.
- Close the lid to Instant pot, cook for an hour. De-pressurize following safety instructions and check for taste and consistency. Add more to cooking time if needed. It took me 1 hr 40 minutes to cook the soup this last time but time varies on beans.
- Serve with rice, sliced chilis or jalapenos and if you like the combination of flavors, add a salad made with pickled vegetables for more authentic taste.

- In a large bowl, add in dried beans, hamhock, onion chunk, bay leave, garlic and water to cover. Let sit for an hour before draining.To the Instant Pot (IP) add in oil and set saute mode for 6 minutes. Once oil is warm, add in sofrito, seasonings EXCEPT for the salt, and tomato sauce. DARK RED KIDNEY BEANS CABBAGE SOUP IN INSTANT POT
Steps:
- Wash the kidney beans very well and soak in water for 7 to 8 hours or overnight for best results.
- Once soaked, drain the water (discard the water used for soaking the beans) and wash the beans again in water very well.
- Add the soaked and rinsed beans to the instant pot.
- Chop the tomatoes and onions, add them to the instant pot.
- Also add salt, garlic, turmeric powder & red chili powder, mix well.
- Add the shrdded cabbage on top.
- Add the water and oil (do not mix after adding water), and close the instant pot with lid in sealing position.
