32 ounce jar sauerkraut
1 pound pork sausage
1/2 onion (sliced)
2 cloves garlic (chopped)
1 tsp salt
1/2 tsp pepper
1 bay leaf
1 cup water

Steps:

  • Drain and rinse the sauerkraut. Give it a light squeeze to remove most of the water. You don't want it bone dry. Mix the sauerkraut with the onion, garlic, salt and pepper.
  • Put 1 cup of water in the bottom of the Instant Pot.
  • Add the sauerkraut in a single layer on the bottom of the IP.
  • Cut the sausage into chunks and place it on top of the sauerkraut.
  • Seal the IP. Cook it on Pressure Cook high for 15 minutes.
  • Natural release for 10 minutes, then manual release. Enjoy!

2 pounds Smoked Sausage or Kielbasa (cut in chunks)
2 pounds Sauerkraut (jar or bag works fine)
6 Potatoes (washed & cubed - I prefer Yukon Gold potatoes that don't need peeled)
3 sprigs Rosemary (Dill can be substituted)
1 cup beer (your favorite flavor - we like Blue Moon or Yuengling)
2 tablespoons vegetable oil (optional for browning sausage)

Steps:

  • Browning sausage on saute setting in Instant Pot is optional. Some enjoy the flavor that browning brings out. Brown sausage in 2 tablespoons of oil if doing this step.
  • Drain most of the liquid from sauerkraut and place in the bottom of a 6 or 8 quart Instant Pot.
  • Add cubed potatoes, chunks of sausage and sprigs of Rosemary.
  • Pour one cup of beer evenly over the top of all ingredients.
  • Seal the pot and cook on high pressure for 9 minutes or stew for 30 minutes. When the timer beeps and cooking is done perform a quick release to remove all pressure.

2 slices bacon
2 pounds fresh kielbasa, sliced into 2-inch pieces
1 medium sweet onion, diced
¼ cup dark brown sugar
3 large yellow potatoes, chopped
2 (16 ounce) packages sauerkraut, drained
1 ½ cups chicken broth
1 apple - peeled, cored, and diced
½ cup beer
½ teaspoon sea salt

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon; cook until crispy, 8 to 10 minutes. Pull bacon out with tongs and set in a bowl. Add kielbasa to the pot; lightly brown on all sides, 5 to 7 minutes. Remove with tongs and place in the bowl with the bacon.
  • Saute onions in the pot until soft, 2 to 3 minutes. Crumble the bacon and add to the pot. Stir in brown sugar. Add potatoes, sauerkraut, chicken broth, apple, beer, and salt. Mix gently.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 12 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method for 10 minutes according to manufacturer's instructions. Release remaining pressure carefully using the quick-release method. Unlock and remove the lid.

2 Tbsp lard or oil
2 oz (55 g) bacon
1/2 lb kielbasa, (cut into desired size pieces)
1 onion, (chopped)
1 lb sauerkraut, (drained)
3 potatoes, (cut into large chunks)
2 garlic cloves, (sliced)
1 apple, (peeled and grated)
1 bay leaf
1/2 Tbsp yellow mustard
1/2 cup white wine or beer
1 cup chicken or vegetable broth
1 tsp smoked paprika
black pepper, (to taste)

Steps:

  • Put oil or lard in Instant Pot*. Using Saute setting, fry bacon and kielbasa until brown. Remove from the pot.
  • Add onion to the pot and saute until soft.
  • Return kielbasa to the pot and add sauerkraut together with all remaining ingredients.
  • Close the lid, set valve to Sealing. Cook for 15* minutes on Manual setting, high pressure, natural release. Serve Instant Pot Sauerkraut immediately with a fresh bread or dinner rolls.

Steps:

2 pound boneless pork roast ((shoulder or leg))
1 teaspoon salt
1/2 teaspoon ground black pepper
1 tablespoon cooking oil
16 ounces sauerkraut with liquid
1 cup apple juice or chicken stock
1 teaspoon dried or fresh rosemary
1 small apple (peeled and sliced)
1/2 onion (cut in chunks)
1 carrot (sliced)

Steps:

  • Season the pork with salt and pepper on all sides.
  • Press the Saute button on the Instant Pot. When it's hot, add the cooking oil. After 1 minute, add the pork roast and brown on all sides. Remove from the pot. Turn off the Instant Pot.
  • Pour the apple juice or chicken stock into the pot and whisk quickly to remove the browned bits from the bottom of the pot.
  • Return the pork to the pot with the liquid. Sprinkle with rosemary. Add the vegetables and apples around the sides of the pork. Top with the sauerkraut.
  • Put the lid on the Instant Pot. Make sure the valve is set to Sealing. Press the Pressure Cook button and set the cook time to 1 hour. When the cook time is over, allow the pot to naturally release pressure.
  • Take the pork out and slice it. Drain the sauerkraut. Serve together.

1 Tablespoon Cooking Oil, (canola or vegetable)
1 Lb. Kielbasa Sausage, (heat serve variety, sliced)
29 Ounces Sauerkraut, (two (2) cans, un-drained)
1/2 Cup Water

Steps:

  • Turn the Instant Pot onto saute, and allow the liner to get hot. Add oil and sausage pieces (work in batches if necessary).
  • Cook until sausage is browned on both sides (about three (3)-five (5) minutes each side).
  • Remove sausage pieces from Instant Pot and carefully add water making sure not to splash any grease. Use a wooden spoon to scrape the bits from the bottom of liner (de-glaze the pot!!). Turn off the Instant Pot.
  • Pour the sauerkraut into the liner, and top with cooked sausage pieces.
  • Close the lid and set the valve to sealing. Use the manual (pressure cook) button to adjust the time to zero (0) minutes. The timer will go off as soon as the Instant Pot comes to pressure. Allow the Instant Pot to complete a natural release for ten (10) minutes before opening the valve to release any remaining pressure.
  • Open the lid and stir the contents. Serve hot.

1 teaspoon mustard powder

Steps:

  • Add the small potatoes to the Instant Pot along with a half cup of water.

4-6 bratwursts
1 large onion (thinly sliced)
12 ounces pale beer
15 ounces sauerkraut

Steps:

  • Turn the Instant Pot to saute and let heat until it reads HOT, or for 2-3 minutes.
  • Add in 1 teaspoon of the oil. Pierce each brat several times with a fork and then place the brats into the oil and sear on each side until browned, about 2 minutes per side. Once browned, remove the brats and place them onto a clean plate.
  • Add the remaining teaspoon of oil and onion and saute the onion for 2-3 minutes, or until just beginning to soften.
  • Turn the pressure cooker off and add in the beer, or stock, and use a wooden spoon to scrape up any browned bits on the bottom of the inner pot.
  • Add the brats back to the inner pot and spoon the sauerkraut over the brats.
  • Set to cook on high pressure for 6 minutes. Once the cook time has elapsed, allow the pressure to release naturally on its own for at least 10 minutes.
  • Serve the bratwurst with the onions and sauerkraut on buns with mustard or plain as desired.
