This easy Shrimp Alfredo Pasta is an Instant Pot dinner made with juicy shrimp and rotini in a creamy parmesan-garlic sauce.

2 tablespoons unsalted butter
3 garlic cloves, minced
3/4 pound raw frozen shrimp, peeled and deveined
4 cups low-sodium chicken broth or water, divided
1 teaspoon kosher salt, to taste
1 pound rotini
1 cup grated Parmesan cheese, plus more for serving
1 cup heavy cream
¼ cup chopped flat-leaf parsley leaves (optional)
3 tablespoons cornstarch

Steps:

  • Add the butter to the pressure cooking pot and select Sauté. When melted, add the garlic and sauté for about 1 minute, until fragrant.
  • Add the shrimp and sauté for another minute.
  • Add 1 cup broth/water to deglaze the pot, scraping up any browned bits from the bottom. Stir in the salt. Add the pasta and add enough broth/water to just cover the pasta. Do not stir.
  • Lock the lid in place. Select High Pressure and 4 minutes cook time. When the cook time ends, turn off the pressure cooker. Use a quick pressure release. When the valve drops, carefully remove the lid.
  • Stir in the parmesan a little at a time until melted. Stir in the heavy cream and parsley.
  • In a small bowl, whisk together the cornstarch and 3 tablespoons of cold water. Select Sauté and add the slurry to the pot, stirring constantly until the sauce thickens. Season with salt and pepper to taste.

20-Minute Instant Pot Shrimp Scampi Pasta image

The genius of this recipe is that all of the ingredients--wine, garlic, shrimp -- even the pasta -- cook together in one pot. Just make sure to use shrimp that's still frozen or they will overcook. You don't have to serve garlic bread with the dish, but there's nothing better for sopping up all that delicious buttery sauce.

6 tablespoons unsalted butter
2 tablespoons olive oil
6 cloves garlic, chopped
3/4 cup dry white wine
Juice and zest of 1 lemon
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
6 scallions, sliced
12 ounces thin spaghetti, broken in half
1 1/2 pounds frozen peeled and deveined shrimp
Garlic bread, for serving, optional
Green salad, for serving, optional

Steps:

  • Add the butter, olive oil and garlic to a 6- or 8-quart Instant Pot® multi-cooker and set to high saute (see Cook's Note). Cook, stirring often, until the garlic is softened but not browned, about 3 minutes. Add the wine, lemon juice and zest, red pepper flakes, 2 teaspoons salt and several grinds of pepper. Bring to a boil and let simmer 1 minute. Add 2 cups water, then add half of the pasta all in one direction and then the other half of the pasta in a criss-cross fashion. Top with the shrimp and half of the scallions.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 1 minute. After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 5 minutes, being careful of any remaining steam, unlock and remove the lid.
  • Using tongs, toss the pasta to evenly coat with the sauce and break up any clumps. Top with the remaining scallions and serve with salad and garlic bread if using.

Steps:

  • Combine cream, broth, garlic, salt, pepper, and Italian seasoning in the bottom of a multi-functional pressure cooker (such as Instant Pot®). Stir to combine. Break pasta in half and lay it on top, making sure pasta is covered with liquid without stirring it. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in Parmesan cheese.
