EASY HOMEMADE THAI CURRY POWDER
This curry powder recipe makes one of the best curry powders you'll ever try. It's also fun to put together and can make a wonderful gift.

Steps:
- Gather the ingredients.
- Place all of the ingredients in a dry frying pan over medium-high heat. Stir continuously for 1 minute, or until pan is very hot. Then reduce heat to medium and continue stirring 6 to 10 minutes. This will lightly toast the spices, leaving them even more fragrant and tasty.
- Remove pan from heat and tip the spices into a bowl to cool. Meanwhile, prepare your grinder. If using a coffee grinder , you will need to wipe it out very well with a damp cloth or paper towel to remove all traces of coffee.
- Place the toasted spices in the grinder and grind well to make your curry powder.
- Use to season your favorite dish and enjoy!
- Stir together all of the ground spices-omitting the bay leaf until you cook your curry. Toast in a pan using the same method-for several minutes over medium heat, or until fragrant but not burnt.
- When cooking with this curry powder, be sure to add 1 to 2 bay leaves to your curry pot.

JAMAICAN CURRY POWDER
An authentic Jamaican curry powder without hot pepper, which should be added separately to any dish. You can also use powdered versions of any of the ingredients, but for better flavor use whole seed. For authentic Jamaican flavor, you will usually add Scotch Bonnet or Habanero peppers to your recipes. However, if you want to add heat directly to the powder, add 2-4 tablespoons cayenne powder to the mix, depending on your taste.

- Combine the coriander seeds, cumin seeds, mustard seeds, anise seeds, fenugreek seeds, and allspice berries in a skillet. Toast over medium heat until the color of the spices slightly darkens, and the spices are very fragrant, about 10 minutes. Remove the spices from the skillet, and allow to cool to room temperature. Grind the spices with the turmeric in a spice grinder. Store in an airtight container at room temperature.

IRAQI CURRY POWDER
Many Iraqi recipes call for curry powder and this is the way I make it. An example of a recipe I use this in often is recipe#420598. It is best to buy whole spices and grind them yourself. I think I cut down the cayenne pepper powder even more as we do not like heat. Feel free to do that also. It is still flavourful.

Steps:
- Combine all the spices in a small spice jar. Give it a good mix.
- Store at room temperature for up to 3 months.
- Add the whole paprika in a frying pan and toast them over med-low heat for a minute.
