1 ½ cups white sugar
2 ¼ teaspoons baking powder
½ teaspoon salt
3 (1 ounce) squares unsweetened chocolate
3 eggs
1 ⅔ cups whipping cream, chilled
2 teaspoons vanilla extract
½ cup Irish whiskey
3 tablespoons instant coffee granules
2 tablespoons white sugar
2 tablespoons Irish whiskey
1 tablespoon instant coffee granules
⅔ cup butter, softened
2 teaspoons vanilla extract
2 ⅔ cups powdered sugar
1 (6 ounce) package semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans. Place waxed paper over a large wire cooling rack. Place a 3-quart mixing bowl in the freezer.
  • Mix flour, 1 1/2 cups sugar, baking powder, and salt together in a bowl.
  • Place unsweetened chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Set aside to cool.
  • Beat eggs in a bowl until thick and lemon-colored, about 5 minutes.
  • Remove cold bowl from the freezer and pour in chilled whipping cream; beat until stiff. Fold in eggs, melted chocolate, and vanilla extract. Add flour mixture, about 1/2 cup at a time, folding gently after each addition, until blended. Pour into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pans for 10 minutes. Run a table knife around the edges to loosen. Invert layers carefully onto the prepared cooling rack and let cool completely, about 30 minutes. Poke holes in the top of the cakes with a skewer or long-tined fork.
  • Stir whiskey, coffee granules, and 2 tablespoons sugar together in a small bowl until coffee is dissolved. Pour 1/2 of the coffee-whiskey mixture over each layer. Let stand at room temperature for 30 minutes.
  • Meanwhile, combine whiskey and coffee granules for the frosting in a large bowl; stir until coffee is dissolved. Add butter and vanilla extract and beat until combined. Gradually mix in powdered sugar on medium speed until smooth. Transfer 1/2 cup of frosting to a pastry bag fitted with an open star tip (#32 or #4B); set aside. Use the remaining frosting to fill layers and frost sides and top of cake.
  • Place chocolate chips in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Allow to cool slightly, then transfer to a small pastry bag fitted with a medium-sized writing tip.
  • Pipe chocolate in a lattice design across the top of the cake. Pipe a shell border or rosettes around the top edge.

1/3 cup shortening
1/3 cup chopped walnuts

2 tablespoons white sugar
3 tablespoons flour
1/8 teaspoons salt
2 1/2 cups all purpose flour
1/4 cup dark brown sugar
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon freshly grated nutmeg
1/2 teaspoon salt
3/4 cup currants
1/2 cup cold butter, cubed
3 eggs
1/2 cup low fat buttermilk
2 teaspoons almond extract
2 tablespoons milk
2 tablespoons flour, set aside

Steps:

  • Add all ingredients into a bowl. Mix together, using a fork, until shortening is fully incorporated.
  • Preheat oven to 425 degrees. Whisk together one egg and two tablespoons of milk for the egg wash and set aside.
  • Whisk flour, sugars, baking powder, salt and nutmeg in a large bowl until thoroughly combined.
  • In a medium bowl, whisk other two eggs, almond extract and buttermilk.
  • Using a fork or a pastry cutter, incorporate the butter into the flour mixture until medium sized crumbs appear. Stir in the currants. Do not over mix.
  • Add buttermilk mixture to the dry mixture and stir until the dough starts to stay together.
  • On a cutting board, place the two tablespoons on flour on the surface. Turn dough out onto the surface. Cut the dough into two equal halves. If necessary, knead each portion of the dough to keep it together, but knead as minimal as possible.
  • Using your hands, shape each half into a circle, about 5 inches in diameter and 1 inch tall. Cut each circle into six wedges.
  • Carefully move each scone onto a baking sheet lined with parchment paper.
  • Brush tops of scones with egg wash mixture. Add coffee crumb mixture by the tablespoon on top of each scone.
  • Bake for 15-17 minutes. Serve immediately or allow to cool and store in an airtight container.

Steps:

  • Make the streusel: Preheat oven to 400°F; set out two cookie sheets or rimmed baking sheets; combine the flour, brown sugar, cinnamon and nutmeg in a medium-size mixing bowl; add the butter, vanilla and pecans; using a pastry blender, cut the butter into the flour mixture until it is reduced to small bits; crumble and press the mixture between your fingertips until it adheres to itself and forms moist, sandy-textured lumps; set aside.
  • Make the scone dough: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, nutmeg and cardamom; drop in the chunks of butter and, using a pastry blender, cut the chunks into the flour until they are reduced to the size of large pearls; stir in the granulated sugar; add the raisins to the flour along with the liquid mixture and stir to form a dough.
  • Turn the dough onto a lightly floured work surface and knead lightly about 10 times; divide the dough in half and form each piece into a 6 1/2- to 7-inch round disc; cut each round into 6 pie-shaped wedges; carefully pick up each scone, brush the top with a little of the milk and press a large handful of the streusel mixture on the top; after it is covered with the topping mixture, carefully transfer the scone to the baking sheet, placing the scones about 2 1/2 inches apart.
  • Bake the scones for 17 to 18 minutes, or until golden and set; cool the scones on the baking sheet for a minute, then remove them to a cooling rack.
  • Serve warm, or cool thoroughly; store in an airtight container, for up to 3 days (or freeze) and reheat at another time.

2 2/3 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/2 cup granulated sugar
1 tablespoon baking powder
1 1/4 teaspoons kosher salt
1 teaspoon freshly grated nutmeg
2/3 cup buttermilk
1/2 cup sour cream
1 large egg
1 large egg yolk
3 tablespoons espresso powder
3 tablespoons vegetable oil, plus more for frying
1 tablespoon pure vanilla extract
1 3/4 cups confectioners' sugar
4 tablespoons coffee cream liqueur, such as Bailey's Irish Cream
2 tablespoons Irish whiskey, such as Jameson

Steps:

  • Whisk together the flour, granulated sugar, baking powder, salt and nutmeg in a large bowl until completely combined. Whisk together the buttermilk, sour cream, whole egg, yolk, espresso powder, oil and vanilla in a medium bowl until completely combined. Fold the wet ingredients to the dry ingredients just until a soft and sticky dough comes together (do not overwork).
  • Line a rimmed baking sheet with parchment paper and liberally dust with flour (about 1/3 cup).
  • Scrape the dough onto the prepared baking sheet. Dust your hands and the top of the dough with more flour, then gently pat out the dough to 3/4 inch thick.
  • Working on the baking sheet, punch out as many rounds as you can with a 3-inch cutter. Then use a 1-inch cutter to punch out the center of each round. (Dip the cutters in flour before each cut to avoid sticking.) Gather the dough scraps and gently re-roll without overworking the dough. Repeat cutting until all the dough has been used (you should have 8 doughnuts and 8 doughnut holes).
  • Set a wire rack inside a rimmed baking sheet and line a second rimmed baking sheet with several layers of paper towels. Fit a large heavy pot with a deep-fry thermometer and pour in vegetable oil to a depth of 3 inches. Heat over medium-high until the thermometer registers 375 degrees F.
  • Fry the doughnuts in batches until deep golden brown, about 2 minutes per side. Transfer to the wire rack and let cool slightly. Fry the doughnut holes until deep golden brown, about 90 seconds per side. Transfer to the wire rack and let drain for 1 minute. Then transfer to the paper-towel lined baking sheet to cool for 10 minutes before glazing. (This two-step process gets a lot more oil out of the doughnuts than using only one method.) Repeat with the remaining dough, making sure the oil returns to temperature between batches.
  • Whisk together the confectioners' sugar, coffee cream liqueur and Irish whiskey in a medium bowl until the glaze is smooth and the consistency of honey; add more confectioners' sugar if necessary.
  • Dip each doughnut into the glaze on one side (we like the craggy side, it has more texture for an appetizing appearance), letting the excess drip back into the bowl, then return it to the wire rack. Toss the doughnut holes in the glaze to coat completely and return to the wire rack. Let the glaze set for 10 minutes before serving.
