Reuben Nachos image

The nacho version of my all-time favorite sandwich. This is a great appetizer idea for a St. Patrick's Day party, or a delicious lunch or dinner entree to make with leftover corned beef brisket after the holiday.

¾ cup mayonnaise
¼ cup ketchup
2 tablespoons sour cream
1 tablespoon sweet pickle relish
½ tablespoon minced red onion
1 teaspoon Dijon mustard
¼ teaspoon garlic salt
1 (11 ounce) package tortilla chips
¼ teaspoon garlic salt
2 cups shredded Swiss cheese
1 cup shredded Cheddar cheese
½ teaspoon dried dill weed
2 cups shredded cooked corned beef brisket
1 cup Bavarian-style sauerkraut with caraway seeds, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix mayonnaise, ketchup, sour cream, relish, red onion, Dijon mustard, and garlic salt together in a small bowl until well blended. Set aside.
  • Layer 1/2 of the tortilla chips in an even layer on a baking sheet. Top with 1 cup Swiss cheese, 1/2 cup Cheddar cheese, and 1/4 teaspoon dill. Repeat layers on top.
  • Bake in the preheated oven until cheeses are melted, about 5 minutes. Remove from oven. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Top nachos evenly with corned beef and sauerkraut. Broil until heated through, 1 to 2 minutes. Top nachos with the mayonnaise sauce.

Built on a foundation of potatoes, like the Motherland, my recipe for Irish Corned Beef Nachos is lip-smacking snack or appetizer that will have your taste buds dancing a jig!

2-2 ½ lbs Russet Potatoes (about three 5" potatoes)
3 tbsp olive oil
2 tsp Litehouse® Freeze Dried Thyme
1 ½ tsp Coarse Sea Salt
1 ½ tsp Ground Black Pepper
6 oz Sharp White Cheddar Cheese, shredded
¾ lbs Shredded Corn Beef*
1 cup Litehouse® Original Thousand Island Dressing

Steps:

  • Preheat of to 450°F. Line two rimmed baking sheets with foil and lightly spray with cooking spray. Set aside.
  • Wash and dry potatoes, leaving skin intact. Slice potatoes crosswise into ¼" rounds.
  • Place potato slices in large bowl and drizzle with olive oil, thyme, salt and pepper.
  • Arrange potato slices in a single layer on foil-lined baking sheets. Bake for 15 minutes or until turning golden brown, and then flip over and cook and additional 15 minutes. Leave oven on.
  • Take potatoes from baking sheets and line bottom of 8" cast iron skillet with 1/3 of potatoes. Top these potatoes with 1/3 portion of corned beef and 1/3 portion of cheese. Add two more layers, repeating process, with remaining potatoes, beef and cheese.
  • Place skillet in 450°F oven for about 5 minutes or until cheese bubbling and beef heated.
  • Remove from oven, drizzle with Thousand Island Dressing, and sprinkle with chopped fresh thyme, if desired.

1 (15 ounce) can corned beef hash
1 (14.5 ounce) package nacho-flavor tortilla chips
1 cup shredded sharp Cheddar cheese
1 (14 ounce) can black beans, drained
1 (8 ounce) jar salsa
1 large tomato, diced
1 large yellow onion, diced
1 cup sour cream
1 (6 ounce) can sliced black olives
¼ cup pickled jalapeno peppers

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Spray a skillet with cooking spray and heat over medium heat. Add corned beef hash and saute until slightly caramelized, 5 to 7 minutes. Remove from the heat.
  • Cover a metal cooking tray with nacho chips. Cover nacho chips with corned beef hash, Cheddar cheese, and black beans.
  • Cook in the preheated oven until cheese is melted and starting to brown and crisp, 8 to 10 minutes. Remove from the oven and top with salsa, tomato, onion, sour cream, olives, and jalapenos.
