SIMPLE HOMEMADE CHOCOLATE SAUCE

Steps:
- In a cold saucepan, whisk together the cocoa and the sugar until all lumps are removed. Add the salt and the water and bring to a boil over medium to medium high heat.
- Reduce to a simmer; stirring constantly. Simmer for about 30 seconds and then remove from heat. Let cool and then add vanilla. Pour into a glass jar and refrigerate until needed. Enjoy!

IRISH MILK CHOCOLATE SAUCE
I call this "Irish" because it has Bailey's Irish Cream and Jameson Irish Whiskey. Came up with this to serve over Vanilla Bean Ice Cream and it was SOOOO yummy! I think it would be wonderful on pretty much anything (coffee ice cream would make it like an Irish Coffee!). Good for St. Pat's Day as it's got those Irish liquors! You could use semisweet or bittersweet chocolate I suppose, but I personally love milk chocolate :)

Steps:
- In a small microwavable bowl (or double boiler) combine chocolate, caramel, nutella, creamer, half and half and salt. Microwave in 20 second intervals (stirring in between) until chocolate is almost melted. Stir to completely melt chocolate.
- Add in small pieces of butter. Stir to melt. Add whiskey and irish cream.
- Serve warm over vanilla ice cream or pound cake or anything else that strikes your fancy. It can be reheated in 10 second intervals in the microwave.

BAILEY'S IRISH CREAM CHOCOLATE SAUCE
Steps:
- In a medium sized mixing bowl, whisk together the creamer, powder, and syrup until smooth and completely incorporated.
- Pour this mixture into a sauce pan, or skillet, bring to a boil (stirring constantly) and then reduce to a simmer. Simmer for 3-5 minutes, or just until thickened.
- Remove the pan from heat, and stir in the chocolate, continuing to stir until smooth and completely incorporated.
- Let the mixture cool 2-3 minutes before using. Use immediately, or store in a sealed container in the fridge until ready to use. If storing, heat the mixture up before serving so that it becomes pourable/spoonable.
