Categories     Breakfast and Brunch     Breakfast Bread Recipes

Time 25m

Yield 4

Number Of Ingredients 4

2 cups all-purpose flour
1 pinch salt
1 teaspoon baking soda
1 cup buttermilk

Steps:

  • Heat a heavy skillet, griddle, or cast-iron frying pan over medium-low heat.
  • Stir the flour and salt together in a bowl, and sift in the baking soda. Make a well in the center of the flour mixture, and pour in the buttermilk. Stir the mixture quickly together into a dough, and turn out onto a floured work surface. Knead the dough a few times, just until it comes together. Gently form the dough into a flattened, round cake about 1/2 inch thick, and cut the round into quarters with a floured knife.
  • Sprinkle a little bit of flour into the bottom of the hot skillet, and cook the wedges 6 to 8 minutes per side, until golden brown.

Provided by Ina Garten

Categories     side-dish

Time 1h15m

Yield 1 loaf

Number Of Ingredients 9

4 cups all-purpose flour, plus extra for currants
4 tablespoons sugar
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
1 3/4 cups cold buttermilk, shaken
1 extra-large egg, lightly beaten
1 teaspoon grated orange zest
1 cup dried currants

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
  • Combine the flour, sugar, baking soda, and salt in the bowl of an electric mixer fitted with the paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
  • With a fork, lightly beat the buttermilk, egg, and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.

  • Cool on a baking rack. Serve warm or at room temperature.

IRISH SODA BREAD

Get the taste of Ireland with this fresh, no-fuss soda bread

Provided by Margaret Hickey

Categories     Buffet, Side dish, Snack

Time 55m

Yield Makes 1 loaf

Number Of Ingredients 7

250g plain white flour
250g plain wholemeal flour
100g porridge oats
1 tsp bicarbonate of soda
1 tsp salt
25g butter, cut in pieces
500ml buttermilk

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
  • Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
  • Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

IRISH SODA BREAD 1

Irish Soda Bread 1 image

I just love it!!!!!!!!!!!!!! You tell me what you think????!!! Filled with dried cranberries and raisins and flavored with the black caraway seeds are so good. You can use regular but the black tops this. These black seed is also known as Black Cumin, Habbatul Baraka (the Blessed Seed), and by its botanical name "Nigella Sativa".

Provided by Rita1652

Categories     Breads

Time 1h5m

Yield 1 loaf, 14 serving(s)

Number Of Ingredients 13

1 cup raisins
1/2 cup dried cranberries
1/4 cup Irish whiskey (optional)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon baking powder
3/4 cup sugar
3 1/2 cups flour
1 1/4 cups buttermilk
1/4 cup butter, softened
2 eggs, slightly beaten
2 tablespoons caraway seeds, using black caraway better known as yummy Or
2 tablespoons nigella seeds, sativa

Steps:

  • Preheat oven to 350 degrees.
  • Pump up dried fruit:.
  • Place raisins and cranberries in a glass bowl 1/4 cup pour water or whiskey (gives it a real Irish kick) over it.
  • Cover with plastic wrap or paper towel and microwave it for 1 minute. Let sit to cool.
  • Add salt, baking powder, sugar, and flour to food processor and pulse 3 times to sift.
  • Add the buttermilk, butter and eggs and mix till it comes to a doughy ball.
  • Mix in seeds and drained raisins, and cranberries. You may need to do this step by hand.
  • Don`t worry if you can knead the dough into a ball it still will be very good. At times my dough is moist because of moisture in the air.
  • Place the dough into a well buttered pan using hands well floured shaping the dough.
  • (I like cast iron skillet 8-9 inches). Pat down in center for even baking.
  • Mark a cross on top and brush with more melted butter.
  • Bake in 350 Degree oven for 50-60 minutes.
