1 cup raisins
½ cup whiskey
3 cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
1 teaspoon salt
½ teaspoon baking soda
1 tablespoon grated orange peel
1 tablespoon caraway seeds
1 ⅓ cups buttermilk
¼ cup butter, melted
½ cup butter at room temperature

Steps:

  • Place raisins in a small bowl; pour in whiskey and allow to soak overnight.
  • The next day, drain raisins and reserve the leftover whiskey.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 2-quart casserole dish.
  • Whisk together flour, sugar, baking powder, salt, and baking soda in a large bowl.
  • Stir drained raisins, orange peel, and caraway seeds into dry ingredients.
  • Beat in buttermilk and 1/4 cup melted butter to make a thick batter.
  • Transfer batter to prepared casserole dish.
  • Bake in the preheated oven until top is golden brown and a toothpick inserted into the center comes out clean, about 1 hour and 10 minutes.
  • Beat 1/2 cup butter in a bowl until fluffy; beat in reserved whiskey, 1 teaspoon at a time, to taste. Serve with soda bread.

2 ½ teaspoons baking soda
1 teaspoon salt
2 ¼ cups buttermilk
1 cup butter, softened
2 eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.

Our family favorite Irish soda bread recipe! Cut into wedges and serve warm with fresh butter as a traditional side to hearty Irish fare such as Stew, Cottage or Shepherd's Pie, or Corned Beef Dinner. Also a tasty tea-time snack served with butter and a dab of marmalade or a drizzle of honey, or with a slice of smoked salmon. Enjoy!

Number Of Ingredients 10

1 cup raisins (or dried currants)
4 tablespoons Irish whiskey (1 shot glass full plus 1 tablespoon)
1 teaspoon honey
3 1/2 cups flour
1/2 cup sugar
1/2 teaspoon baking soda
2 teaspoons baking powder
3/4 teaspoon salt
1 pint sour cream
2 eggs

Steps:

  • Preheat the oven to 350°F.
  • In a small saucepan or in the microwave, bring the whiskey and honey to a boil and add the raisins or currants. Cover and off the heat. Set aside and let steep.
  • Butter a round 1 1/2 to 2 quart baking dish, set aside.
  • Add the flour, sugar, baking soda, baking powder and salt together in a large bowl; use a wire whisk to combine.
  • In a small bowl, beat the eggs and stir in the sour cream, mixing well to combine.
  • Add the egg mixture to the flour mixture, stir well with a wooden spoon (batter will be thick).
  • Stir in the whiskey-soaked raisins or currants (along with the whiskey-honey they were steeped in); blend well.
  • Turn batter into the prepared baking dish.
  • Dust the top with flour and pat the batter evenly in the pan with your hands.
  • Use a sharp knife to make a cross on the top.
  • Bake for 50 minutes in preheated 350 F oven.
  • Remove to a rack and let cool for 10 minutes, then turn out onto a serving dish. Cut into wedges and serve warm with real butter.

Slightly sweetened Irish Soda Bread with big plump whiskey raisins is positively decadent with a smear of Kellygold butter!

1/2 cup Irish whiskey (I used Tullamore DEW)
1 1/2 cup raisins
1 3/4 cup buttermilk
1 large egg
4 1/4 cups all-purpose flour
3 Tbsp sugar
1 tsp baking soda
1 tsp salt
5 Tbsp butter (COLD)
1 Tbsp caraway seeds

Steps:

  • In a small bowl, add the raisins with 1/2 cup Irish whiskey. Cover with plastic wrap and place in the refrigerator for no less than 6 hours.
  • Preheat oven to 400 degrees. Apply a thin coating of oil to a cast iron skillet. If you don't have a cast iron skillet, you can use a cake pan or pie plate prepared with a light coating of cooking spray.
  • In a medium bowl, whisk together the buttermilk and egg and set aside. In a large bowl, whisk together the flour, sugar, baking soda, and salt. Using a pastry blender, cut the cubed COLD butter into the flour until the mixture resembles course crumbs.
  • Take whiskey soaked raisins out of the refrigerator and drain. Pour raisins out onto a paper towel to absorb remaining whiskey. Toss raisins into flour mixture and stir. Add caraway seeds and stir until ingredients are well combined.
  • Pour the buttermilk/egg mixture into the flour mixture and stir until a rough dough forms. Place dough onto a lightly floured surface. With floured hands, gently form the dough into an 8-inch circle. No kneading is necessary, but make sure the dough is pliable and no longer crumbly. Note: If the dough is too dry, add more buttermilk a little at a time. If dough is too sticky, add more flour a little at a time.
  • Place dough disc on prepared cast iron skillet and score the top with a sharp knife. Bake bread for 40 to 45 minutes, or until center is cooked through, and top is golden brown. If top of bread is getting too dark before the end of baking, cover loosely with aluminum foil.

1 tablespoon double-acting baking powder
1 teaspoon salt
3/4 teaspoon baking soda
1 cup raisins or dried currants, rinsed in hot water and patted dry

2 cups buttermilk

Steps:

  • Into a large bowl sift together the flour, the baking powder, the salt, and the baking soda and stir in the raisins and the caraway seeds. Add the buttermilk and stir the mixture until it forms a dough. Turn the dough out onto a well-floured surface and knead it for 1 minute. Halve the dough, with floured hands shape each half into a round loaf, and transfer the loaves to a lightly greased baking sheet. Cut an X 1/4 inch deep across the tops of the loaves with a sharp knife and bake the loaves in the middle of a preheated 350°F. oven for 45 to 55 minutes, or until a tester comes out clean. Transfer the loaves to racks and let them cool.

1 cup raisins
1 cup Irish whiskey (option -- can substitute with hot water)
4 tablespoons unsalted butter, cold
1 cup flour, allpurpose
1 cup whole wheat flour
3 tablespoons sugar
1 teaspoon baking soda
3/4 teaspoon salt
3/4 cup buttermilk, plus
1 tablespoon buttermilk

Steps:

  • Preheat oven to 375. Oven shelf should be just below the center of oven.
  • Grease baking sheet, or use silpat liner, or greased parchment paper.Makes a 7" by 3" high round of bread.
  • Soak the raisins in whiskey or water for 30 minutes. If using whiskey, drain and reserve the whiskey.You will have about 3 tblsp left.
  • Cut the butter into small slices so that it begins to soften.
  • In a large bowl, stir together the flours,sugar,baking soda,and salt.
  • With fingertips rub in the butter until the mixture resembles coarse crumbs.
  • Stir in the raisins.
  • With a wooden spoon,stir in the buttermilk just until the dry ingredients are moistened and the dough comes together.
  • Empty dough onto counter and knead it lightly about 8 times until smooth but still a little sticky. If it sticks to the counter,use a bench scraper to gather it together. Avoid adding extra flour. Flour hands if absolutely necessary.
  • Pat out dough into a 6 inch round and about 1 & 3/4 inches high. If it sticks flour it lightly at this stage.
  • Place on baking sheet and score top 1/2" deep from top to bottom and side to side forming a cross.
  • Bake the bread for 30 minutes or until an instant read thermometer reads 190 degrees in the middle of loaf.
  • Remove from oven and cool on rack covered with towel. Keep warm to serve.

  • Microwave whiskey and sugar until hot, about 20 seconds. Cool.

½ cup golden raisin
2 cups all-purpose flour
¾ cup whole wheat flour
3 tablespoons granulated sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda, scant
1 ¼ teaspoons fine sea salt
8 tablespoons unsalted butter, cold, cut into 1/2 inch (1 cm) cubes
¾ cup buttermilk, plus more for brushing
2 teaspoons caraway seed, divided
flaky sea salt, for sprinkling
4 tablespoons unsalted butter, room temperature
1 tablespoon irish whiskey, leftover from soaking raisins
1 teaspoon flaky sea salt

Steps:

  • In a small saucepan over medium heat, bring the whiskey to a simmer. Turn off the heat, add the raisins, and set aside for at least 15 minutes to allow the raisins to plump.
  • Drain and reserve the raisins and whiskey separately.
  • Preheat the oven to 400°F (200˚C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and fine sea salt.

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment; set aside. (You could also bake this bread in a cast iron skillet, if you like. Be sure the skillet is seasoned and lightly greased so the bottom won't stick.)
  • In a large mixing bowl, whisk together the all-purpose flour, whole wheat pastry flour, brown sugar, salt and baking soda. Using a box grater, grate the butter into the dry ingredients and mix quickly, being sure the butter is broken up into pea-sized bits. Next, add the raisins and toss them gently in the flour mixture so they are evenly distributed.
  • Create a well in the center of the flour mixture and pour in the buttermilk. Using a wooden spoon, mix it together until it forms a shaggy ball. Drop the soda bread dough onto a lightly floured counter and knead a few times, being sure to not over handle it, which will result in tough bread. Form the soda bread into a 1 1/2-inch thick disc.
