1 tablespoon olive oil
1 teaspoon minced garlic
1 teaspoon dried basil
salt to taste
½ teaspoon pepper
1 (4 ounce) skinless, boneless chicken breast half - cut into bite-size pieces
2 tablespoons olive oil, divided
2 tablespoons minced garlic
1 onion, chopped
2 fresh jalapeno pepper, seeded and chopped
2 tomatoes - peeled, seeded, and coarsely chopped
salt to taste
1 teaspoon turmeric powder
1 cup uncooked white rice
1 lime, juiced
2 bay leaves
1 cup chicken stock
1 ½ cups water
3 tablespoons chopped cilantro

Steps:

  • Mix olive oil, garlic, basil, salt, and pepper in a small bowl. Toss chicken in marinade, cover and refrigerate overnight.
  • Heat 1 tablespoon of olive oil in a small saucepan over medium-high heat; cook chicken and set aside. Heat remaining 1 tablespoon of olive oil, and cook garlic and onion until translucent. Stir in jalapeno, chopped tomatoes, salt, and turmeric; cook for 2 minutes to soften tomato. Stir in the rice, mixing thoroughly. Stir in half of the lime juice, bay leaves, chicken stock, water, and cooked chicken. Bring to a boil, reduce heat to low, then cover and simmer 25 minutes, stirring occasionally until the rice has cooked. Remove from heat, discard the bay leaves; stir in the remaining lime juice and cilantro.

6 chicken breasts, boneless and skinless
2 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup light corn syrup
1 teaspoon lime zest
2 tablespoons lime juice
1/2 teaspoon rum flavoring
2 1/2 cups chicken broth
1 (6 ounce) package long grain and wild rice blend
1/2 cup salted cashews, coarsely chopped

Steps:

  • Brown chicken well in oil in 12-inch skillet over medium heat; season with salt and pepper. Combine corn syrup, lime peel, lime juice and rum flavoring; pour over chicken. Reduce heat, cover and cook over low heat until chicken is tender, 20 to 25 minutes.
  • While chicken is cooking, bring broth to a boil in medium saucepan. Stir in contents of rice and seasoning packets; bring to a boil. Cover tightly; cook over low heat until all liquid is absorbed, about 25 minutes.
  • Remove from heat; stir in cashews. Remove chicken from skillet; keep warm. Remove excess fat from pan drippings with paper toweling. Bring pan drippings to a boil; cook, stirring constantly, until reduced to glaze consistency. Arrange rice and chicken on serving platter. Spoon glaze over chicken.

3 tablespoons fresh lime juice
4 teaspoons fish sauce
4 teaspoons soy sauce
4 teaspoons sugar
1 teaspoon grated fresh ginger
4 skinless, boneless chicken breasts (about 6 ounces each)
4 cloves garlic (1 grated, 3 chopped)
Kosher salt and freshly ground pepper
1/4 cup vegetable oil
6 ounces dried rice vermicelli
1/2 pound snow peas, strings removed
1 cup fresh cilantro, torn

Steps:

  • Preheat the oven to 400˚ F. Bring a medium pot of water to a boil. Stir the lime juice, fish sauce, soy sauce, sugar and ginger in a small bowl until the sugar is dissolved. Toss the chicken with 2 tablespoons of the sauce and the grated garlic; season with salt and pepper. Let marinate 10 minutes.
  • Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Pat the chicken dry. Add to the skillet and cook until browned, 3 minutes per side. Transfer the chicken to a baking sheet and bake until cooked through, 8 to 10 minutes. (Reserve the skillet.) Let the chicken rest 5 minutes, then slice.
  • Meanwhile, add the noodles to the boiling water and cook as the label directs. Drain in a fine-mesh sieve and rinse under cold water. Shake off any excess water.
  • Heat the remaining 2 tablespoons vegetable oil in the reserved skillet over medium-high heat. Add the snow peas, chopped garlic and a big pinch of salt. Cook, stirring, until the snow peas are bright green, 1 minute. Add the noodles and stir until hot, 2 minutes. Season with salt and pepper; stir in half the cilantro.
  • Divide the noodles and chicken among plates. Drizzle with the remaining sauce and top with the remaining cilantro.

1 tablespoon olive oil
1 yellow onion, diced
2 poblano peppers, chopped
2 cloves garlic cloves, minced
2 ½ cups low-sodium chicken broth
1 lime, juiced
14 ½ oz canned cooked black beans, rinsed and drained
2 diced tomatoes
1 ½ cups jasmine rice, uncooked, rinsed
½ teaspoon salt
¼ teaspoon pepper
3 tablespoons cilantro, chopped

Steps:

  • In a skillet, heat a small amount of oil on medium-high heat. Add chicken and season with salt and pepper.
  • Cook the chicken thoroughly, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  • Add remaining olive oil to the skillet. Add onion and peppers and sauté for 5-7 minutes.

2 tablespoons soy sauce
2 tablespoons vinegar
1 tablespoon cornstarch
1 medium green bell pepper, cut into 1 inch strips (2cm)
1 medium tomatoes, coarsley chopped
3 cups hot cooked rice

Steps:
