Canned Salmon Salad image

This is actually a modification of my parents' tuna salad recipe. I made it yesterday and enjoyed it so much that I just had to share it. You can eat this salmon salad plain, put it in a sandwich (with or without some romaine lettuce), put it on crackers for a party appetizer, serve it over mixed greens as a salad entrée, or put it on a slice of toast with some good Cheddar cheese and stick it in the toaster oven to make a salmon melt. Enjoy!

1 (14.75 ounce) can salmon, drained and flaked
1 medium pear - peeled, cored, and diced
1 large hard-boiled egg, chopped
1 stalk celery, diced
1 ½ tablespoons mayonnaise
½ teaspoon onion powder, or more to taste
1 teaspoon curry powder, or more to taste

Steps:

  • Mix salmon, pear, egg, celery, mayonnaise, onion powder, and curry powder together in a bowl.

1/4 cup diced sweet gherkin
2 tablespoons sweet pickle juice
1/2 cup celery, chopped
3/4 cup mayonnaise

Steps:

  • Mix all ingredients together well and chill till ready to serve.
  • Nice served over lettuce leaves. Enjoy!

Steps:

  • In a small bowl, combine the first five ingredients; mix well. Rub over flesh side of fillet; refrigerate for 30 minutes. Place skin side down in a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 375° for 20-25 minutes or until fish flakes easily with a fork.

11 ounces mandarin oranges, drained
1/2 teaspoon sea salt
1 cup pineapple chunk, drained
1/2 cup celery, thinly sliced
1/2 cup slivered almonds
3/4 cup mayonnaise

Steps:

  • Sprinkle salmon with salt and pepper; grill or cook on stove until done. Flake salmon.
  • Combine salmon, pineapple, Mandarin oranges, celery and almonds. Gently stir in mayonnaise.
