- Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a baking sheet with olive oil.
- Slice bagels into 1/8 inch thick rounds using a serrated knife. Arrange them in a single layer on the greased baking sheet. In a small bowl, stir together the olive oil, garlic, Italian seasoning, and Parmesan cheese. Use a spoon or pastry brush to apply the flavored olive oil to the bagel chips. If you start to run out of the mixture, you can add a little bit more oil without sacrificing any flavor. Season the chips lightly with salt and pepper.
- Bake for 15 to 20 minutes in the preheated oven, or until the chips are lightly browned. Remove from the oven and cool. The chips will become crispier as they cool.

REAL HOMEMADE BAGELS

- Combine 1 1/4 cup water, flour, sugar, 1 teaspoon salt, vegetable oil, and yeast in the mixing bowl of a stand mixer. Mix on low speed using the dough hook until well-developed, about 8 minutes. To ensure the gluten has developed fully, cut off a walnut-sized piece of dough. Flour your fingers, and then stretch the dough: if it tears immediately, the dough needs more kneading. Fully developed dough should form a thin translucent "windowpane."
- Transfer the dough to a lightly oiled bowl, cover it with plastic wrap and a kitchen towel, and let rise for 2 hours.
- Punch the dough down, place it on a lightly floured work surface, and use a knife or dough scraper to divide the dough into 6 pieces (or more, for smaller bagels). Roll each piece of dough into a sausage shape about 6 inches long. Join the ends to form a circle. Repeat with the remaining dough, and let the bagels rest for 15 minutes.
- Preheat oven to 475 degrees F (245 degrees C). Line a baking sheet with parchment paper. Arrange small plates with poppy seeds, sesame seeds, and onion flakes next to the baking sheet.
- Bring 4 quarts water to a boil in a large pot. Add honey, if desired (see Editor's Note). Boil the bagels, three at a time, until they rise to the surface of the pot, about 1 minute per side. Remove the bagels with a slotted spoon and place them on the parchment-lined baking sheet.
- Dip the tops of the wet bagels into the toppings and arrange them, seeds up, on the baking sheet. Sprinkle with coarse salt, if desired. Bake in the preheated oven until the bagels begin to brown, 15 to 20 minutes.

- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Unroll dough on a clean surface. Roll out dough, if necessary, into a 8x12-inch rectangle. Using a pizza cutter or knife, cut the dough into 6 rows by 4 rows to make 24 squares. Divide cream cheese amongst each square, placing approximately 3/4 teaspoon in the middle of each. Bring all 4 corners up over the cheese and pinch the corners together lightly; place on the prepared baking sheet.
- Whisk together egg and water and lightly brush over each crescent bite. Sprinkle with bagel seasoning.
- Bake in the preheated oven until lightly browned, 10 to 12 minutes. Let cool slightly before eating as filling will be hot.

Steps:
- Heat oven to 350°F.
- Spray a 13x9x2-inch glass baking dish with cooking spray.
- Unroll one package of crescent rolls and use them to line the bottom of the dish. Pinch the seams together with your fingers.
- Cover rolls with half of the salami, provolone and ham.
- Lightly beat 6 of the eggs with the parmesan; pour half over top of the deli meat.
- Top with half of the peppers.
- Repeat layering the remaining salami, provolone, ham, egg mixture and peppers.
- Top with remaining package of rolls.
- Lightly beat the remaining egg and brush over top.
- Cover dish with foil; bake for 30 minutes.
- Uncover and bake for 30 minutes more.
- Cool 1 hour; cut into 32 squares and serve.

VEGETARIAN BAGEL BITES
These can also be made with meat. I have made them with sausage and diced pepperoni. You could probably also use Canadian Bacon or ham. I have used minced green onion and mushrooms on the sausage bagel bites, and sliced olives with the pepperoni ones. If you add too much meat, add 8 oz. more tomato sauce. My children love these. Children also like these made up with just cheese minus the veggies and meat. If not adding meat or veggies, add extra cheese to the recipe. Cooking time only includes the time to cook the bell pepper and mushrooms.

- In a large fryng pan put the oil and green bell pepper.
- Cook over medium heat, stirring often.
- When the green bell pepper is half cooked, add the sliced mushrooms and keep stirring until the liquid has evaporated and the mushrooms are cooked. Lightly season with salt and pepper.
- Turn off heat and let cool.
- After the mixture has cooled, stir in the tomato sauce, Italian seasonings, garlic powder, sliced olives and the mozzarella cheese. Mix well and set aside.
- Take out a large baking sheet with sides, like one that you would use to bake cookies.
- Split open the bagels, laying them down, split side up, on the baking sheet.
- Add around 2 Table. of the vegetable/cheese mixture on top of each bagel half. You may have enough filling to make more bagels.
- Place the baking sheet with the bagels, in the freezer for about 4 hours, then remove and place in freezer bags and put into the freezer for an easy quick snack or kids meal.
- To serve: Preheat oven to 350 degrees. Place desired number of bagel bites on a baking sheet and bake for around 23 minutes. Eat at once while still hot.
