1 lb. trimmed sugar snap peas ((about 5 cups))
3 tablespoons of your favorite store-bought or homemade Italian salad dressing*

Steps:

  • Bring 6 cups of water to a boil in a large saucepan.
  • Add trimmed sugar snap peas and 1 teaspoon of salt to the boiling water, and cook snap peas until crisp-tender (about 1 ½ to 2 minutes).
  • While the snap peas are cooking, fill a large bowl with ice water.
  • Drain peas, transfer to ice water, then drain again and dry with paper towels.
  • Place snap peas in a serving bowl and toss with dressing. Serve immediately, or cover and refrigerate until ready to serve.

  • Preheat oven to 450ºF.
  • On a rimmed baking sheet, toss snap peas with oil, salt, pepper, and garlic powder. Bake for 10 to 12 minutes or until desired tenderness.

  • Preheat oven to 425˚F.
  • Line a large rimmed baking sheet with aluminum foil. Arrange sugar snap peas and red onions on baking sheet.
  • Drizzle with olive oil and mix around until everything is coated.
  • Add garlic powder, Italian seasoning, salt, and pepper; stir around to combine.
  • Roast for 10 to 12 minutes, or until crisp tender, stirring once during cooking.

2-3 c sugar snap peas, ends trimmed or not
2 Tbsp olive oil, or other oil depending on what seasonings you choose
1-2 tsp seasoning of choice, or more, to taste (cajun, mexican, italian, herbs de provence, advieh, etc.)
2-4 Tbsp freshly grated parmesan (optional)
1/2 tsp coarse salt, to taste

Steps:

  • 1. Note: the snap peas will not become crispy or crunchy like potato chips. If I ever figure out how that is done I will let you know! Preheat oven to 350 degrees. Line 1 or 2 jelly roll pans with parchment paper.
  • 2. In a large mixing bowl combine the snap peas, oil and seasoning of choice. Stir well to coat.
  • 3. Arrange the vegetables evenly and singly on the parchment paper. You may have to use 2 jelly roll pans to fit them all.
  • 4. Bake for 1/2 hour, turning the pan around and flipping the snap peas over after 15 minutes.
  • 5. Remove from pan and if using cheese, lightly grate over the snap peas and serve. Can be served hot or at room temperature.
