Italian BBQ Cube Steak

Number Of Ingredients 13

2 tablespoons EVOO Extra Virgin Olive Oil
4 beef cube steaks (about 2 pounds total)
Salt and ground black pepper
1 slice pancetta or bacon
chopped (optional)
1/2 medium onion
chopped
1 clove garlic
finely chopped or grated
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
1 teaspoon Worcestershire sauce
1 8-ounce can tomato sauce

Steps:

  • Place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons
  • Season the steaks with salt and pepper, and sear in the pan (working in batches if need be) until the steaks have a nice crust on the outside, about 3 minutes per side
  • Remove the cooked steaks from the skillet and reserve warm on a plate
  • Return the skillet to medium-high heat and add the pancetta or bacon, if using
  • Cook until golden brown and crispy, about 5 minutes
  • Add the onion and garlic to the pan, and cook until tender, about 5 minutes
  • Add the balsamic vinegar, brown sugar, Worcestershire and tomato sauce to the pan, season with salt and pepper, and bring up to a bubble
  • Reduce the heat to medium and simmer the sauce until lightly thickened, 3-4 minutes
  • Serve the steaks with a hearty pour of the Italian BBQ sauce and a fresh green salad alongside

1 teaspoon dried basil
1/2 teaspoon garlic powder
1/4 teaspoon pepper
2 small zucchini, sliced
8 cherry tomatoes, halved
1 small onion, chopped
1 teaspoon olive oil, divided
2 beef cube steaks (4 ounces each)
2 teaspoons shredded Parmesan cheese

Steps:

  • In a small bowl, combine the basil, garlic powder and pepper. In a large skillet, saute the zucchini, tomatoes, onion and 1 teaspoon spice mixture in 1/2 teaspoon oil until zucchini is crisp-tender. Remove and keep warm. , Sprinkle the remaining spice mixture over cube steaks. In the same skillet, cook steaks in remaining oil over medium heat for 1-2 minutes on each side or until no longer pink. Sprinkle with Parmesan cheese. Serve with vegetables.

This was something I threw together for dinner tonight. I was tired of the same old cube steak recipes. This was a little different. To make the steaks a little more tender, I let them marinate in Italian dressing all day. When I came home they were ready to pop on the grill. While they grilled, I made the sauce. It's super easy. I'll give you the ingredients I used, but you can experiment to adjust to your tastes. This recipe is for 2 servings, but you can change to allow more. Steak fries, baked potato, steamed broccoli, corn, pasta salad or tossed salad would be some great sides to serve with this dish.

2 beef cube steaks
2 tablespoons bottled Italian dressing (homemade or lite Italian is fine, also)
1 tablespoon McCormick's Montreal Brand steak seasoning
1 tablespoon olive oil
1 red onion, very thinly sliced
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
2 tablespoons flour
1 tablespoon sugar
1/2 cup Chardonnay wine
1 cup stock (veg or chicken or beef.. I used veg)
salt and pepper

Steps:

  • Place steaks and 2 Tbsp of Italian dressing in freezer zip bags to marinate for a couple hours or all day.
  • When ready to grill lightly coat both sides of each steak with Montreal Steak Seasoning.
  • Heat grill to med-hi.
  • Cook steaks about 10 minutes for each side.
  • For the sauce:.
  • Heat the oil in a large heavy frying pan and add the onions.
  • Cook on a low heat for about 10-15 minutes until soft. Stir in the basil/rosemary and cook for another 5 minutes.
  • Turn the heat up and add the sugar, let the onions caramelize slightly by stirring over a medium high flame for 3 minutes, add the flour and cook for a few minutes before adding the stock and wine.
  • Taste and then add salt and pepper.
  • Serve over steaks.

This is a great Italian style way to prepare beef or venison cube steaks. Double the ingredients for a crowd!

3 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 eggs
2 tablespoons water
⅓ cup crushed saltine crackers
⅓ cup grated Parmesan cheese
½ teaspoon dried basil
3 tablespoons vegetable oil
4 (4 ounce) beef cube steaks
1 ¼ cups canned tomato sauce
2 ¼ teaspoons white sugar
½ teaspoon dried oregano, divided
¼ teaspoon garlic powder
4 slices mozzarella cheese
⅓ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
  • Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.
  • Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

  • Mix the tomato sauce with the basil, oregano, garlic, onion, and mushrooms.Pour over cube steak and put in preheated oven for 20-25 minutes.
  • Top with the mozzerella, and then the parmesan cheese. Return to oven til melted. About 5 minutes.

2 lbs beef cube steaks
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
1 (14 1/2 ounce) can canned diced tomatoes
1 (15 ounce) can canned tomato sauce
1 large onion, thinly sliced
1 teaspoon italian seasoning
5 small zucchini, cut into 1/2 inch slices

Steps:

  • In a large resealable plastic bag, place the cube steak, flour, salt, and pepper. Seal, and shake to coat.
  • Heat the olive oil in a large skillet over medium heat, and brown the cube steak.
  • Reduce heat to low, and mix in the tomatoes, tomato sauce, onion, and Italian seasoning.
  • Cover, and simmer at least 1 hour, stirring once.
  • Place the zucchini in the skillet, and coat with the tomato sauce.
  • Continue to simmer uncovered 10 minutes, or until zucchini is tender.
